Pecan French Toast

This was my first attempt at baked french toast and I thought it was delicious, especially considering it's somewhat "healthier" than many of the other recipes I looked at. None of the others I served it to used the maple syrup I set out; they seemed to enjoy "as is".

The Ultimate Chili

I LOVE this chili! My husband and I both find it addictive and can't stop eating! I add onions, a can of tomato paste, and bump up the spices a little. It's awesome!

Charley's Slow Cooker Mexican Style Meat

My mistake must have been either using the wrong hot sauce or shredding up the meat and putting it back into the sauce. We love spicy food, but this was just way too hot and despite our efforts to tone it down, we just couldn't. My husband still tells the story about the "Atomic Beef"!

Orange Roughy with Citrus Sauce

Pretty good. I served the sauce on the side and had some left over with just two fish fillets. I thought it was too tart, but my husband liked it the way it was. Next time I might use more orange juice and less lime juice.

Spinach Roll-Ups

I tried these with the cream cheese instead of mayo. They sounded delicious (I love spinach dip), but I didn't care for them. Had lots leftover from a party and neither my husband or I wanted them (and he will eat just about anything). Ended up pitching them.

Creamy Pesto Dipping Sauce (For Veggies)

Oh, so yummy! I used the whole brick of cream cheese, which after being in the frig, made it more of a spread than a dip, but it did soften up after sitting out. Great with veggies and pita chips. I heated up the leftovers and used it as a sauce on tortellini and that was wonderful, too!

Artichoke Chicken

OK, I was totally surprised I didn't care for this much, since I love artichokes and it's similar to the "Broiled Tilapia Parmesan", which I make all the time. I think it would help to grill or brown the chicken first as some reviewers did and maybe to broil the chicken a bit at the end. My topping did not get brown or crusty, just seemed to make my chicken greasy and unappetizing.

Prune and Olive Chicken

I just HAD to try this, since I love interesting combinations of flavors. It was good, but had some sharpness to the taste I didn't like (maybe the capers?) The leftovers seemed to mellow and I liked it better then.

Dad's Double Whole Grain Pancakes

Really good pancakes--and I didn't think I could make good pancakes! Subbed 1/2 cup Splenda for the 3/4 cup sugar and they were perfect. The full batch makes a lot of pancakes, but they really taste quite good when frozen and reheated in the microwave.

Caribbean Coconut Chicken

I made "as is", except cooked on the stovetop instead of in the oven. The flavors of the sauce were complex and interesting; however, the chicken seemed somewhat tasteless. Since I like more intense flavors, I would make again using some more spices while browning the chicken. Overall, an interesting and good dish!
