The Ultimate Chili

I LOVE this chili! My husband and I both find it addictive and can't stop eating! I add onions, a can of tomato paste, and bump up the spices a little. It's awesome!

Orange Roughy with Citrus Sauce

Pretty good. I served the sauce on the side and had some left over with just two fish fillets. I thought it was too tart, but my husband liked it the way it was. Next time I might use more orange juice and less lime juice.

Chili I

It was very interesting! My husband and I liked it, but I don't think it will become our "regular" chili recipe--I prefer the "Ultimate Chili". Tied for third in the chili cookoff (out of seven chilis submitted).

Charley's Slow Cooker Mexican Style Meat

My mistake must have been either using the wrong hot sauce or shredding up the meat and putting it back into the sauce. We love spicy food, but this was just way too hot and despite our efforts to tone it down, we just couldn't. My husband still tells the story about the "Atomic Beef"!

Quick Poached Salmon with Dill Mustard Sauce

Very good! I'm trying to learn to like salmon (since I know it's healthy) and prepared this way, I think I could eat it often. The sauce is a bit runny; to be honest, I wanted to spread it on thicker since it was so good. Will definitely make again.

Caribbean Coconut Chicken

I made "as is", except cooked on the stovetop instead of in the oven. The flavors of the sauce were complex and interesting; however, the chicken seemed somewhat tasteless. Since I like more intense flavors, I would make again using some more spices while browning the chicken. Overall, an interesting and good dish!

Gooey Butter Cookies

These cookies were good, but I had to rate them lower since I had an awful time making them. Even though I chilled the dough overnight, I had a terrible time rolling them into balls. Also, after I had baked the amount of time indicated, the cookies were still so gooey they completely fell apart when I tried to take them off the cookie sheet. Although they're yummy, I think I'll try the cake next time.

Spinach Roll-Ups

I tried these with the cream cheese instead of mayo. They sounded delicious (I love spinach dip), but I didn't care for them. Had lots leftover from a party and neither my husband or I wanted them (and he will eat just about anything). Ended up pitching them.

Delicious Black Bean Burritos

Yummy and super easy to make with stuff usually on hand. I used a can of "southwestern" black beans flavored with cumin and chili and just drained them. They were nicely spicy and wonderful!

Pecan French Toast

This was my first attempt at baked french toast and I thought it was delicious, especially considering it's somewhat "healthier" than many of the other recipes I looked at. None of the others I served it to used the maple syrup I set out; they seemed to enjoy "as is".

Creme Brulee French Toast

Great stuff! I followed the ingredients pretty closely, but instead of making the caramel sauce and putting it in the bottom, I made it the next morning and poured over the bread. Still came out wonderfully!

Dad's Double Whole Grain Pancakes

Really good pancakes--and I didn't think I could make good pancakes! Subbed 1/2 cup Splenda for the 3/4 cup sugar and they were perfect. The full batch makes a lot of pancakes, but they really taste quite good when frozen and reheated in the microwave.

Butternut Squash Soup
