Nutty Coconut Fish

Reviewed: May 18, 2006
This was good, but I was disappointed it was neither as nutty or as coconutty as I had hoped. I would use less bread crumbs in the mix next time.

Pumpkin Peanut Soup

Reviewed: Feb. 18, 2006
Not a favorite of ours. A small cup might be good at a dinner party, but I made it for a light supper with bread, and it was just something we didn't want too much of.

Vegetable Chowder

Reviewed: Jan. 15, 2006
Really good. I was somewhat surprised since it had so little seasoning. I did add garlic, but nothing else.

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

Reviewed: Jun. 8, 2005
I love this and make it often. Usually have all the ingredients on hand if I sub canned tomatoes and it's so quick and easy to make.

Creamy Pesto Dipping Sauce (For Veggies)

Reviewed: May 4, 2005
Oh, so yummy! I used the whole brick of cream cheese, which after being in the frig, made it more of a spread than a dip, but it did soften up after sitting out. Great with veggies and pita chips. I heated up the leftovers and used it as a sauce on tortellini and that was wonderful, too!

Artichoke Chicken

Reviewed: Apr. 10, 2005
OK, I was totally surprised I didn't care for this much, since I love artichokes and it's similar to the "Broiled Tilapia Parmesan", which I make all the time. I think it would help to grill or brown the chicken first as some reviewers did and maybe to broil the chicken a bit at the end. My topping did not get brown or crusty, just seemed to make my chicken greasy and unappetizing.

Hearty Vegetable Lasagna

Reviewed: Apr. 10, 2005
Very good! Used no-boil noodles and added a few extra veggies, and couldn't be happier with the results. Even my meat-loving husband loves it!

Prune and Olive Chicken

Reviewed: Feb. 20, 2005
I just HAD to try this, since I love interesting combinations of flavors. It was good, but had some sharpness to the taste I didn't like (maybe the capers?) The leftovers seemed to mellow and I liked it better then.

Kitchen Sink Meatloaf

Reviewed: Feb. 20, 2005
I am not a meatloaf fan, but this was pretty yummy, and my hubby LOVED it! To me, it tasted like sloppy joe loaf, and I liked the flavor much better than other meatloaves I've had.

White Chili IV

Good flavor, considering I'm not a big fan of broth-based soups. On the other hand, hubby loved it.

I was surprised to find I loved it, even with only about 3 oz. cream cheese (I tried to keep it healthy). Love the sweet, spicy flavors and the creamy texture.

Wonderful stuff! And I was surprised that it made a very appealing-looking dish. I now make it often.

Dad's Double Whole Grain Pancakes

Reviewed: Aug. 18, 2004
Really good pancakes--and I didn't think I could make good pancakes! Subbed 1/2 cup Splenda for the 3/4 cup sugar and they were perfect. The full batch makes a lot of pancakes, but they really taste quite good when frozen and reheated in the microwave.

Creme Brulee French Toast

Reviewed: Apr. 5, 2004
Great stuff! I followed the ingredients pretty closely, but instead of making the caramel sauce and putting it in the bottom, I made it the next morning and poured over the bread. Still came out wonderfully!
