Banana Banana Bread
I've been staring at the bananas on my counter slowly wither away, and finally decided to do something with them! After baking this recipe, I was glad I did. I decided to make muffins and added a brown sugar, coconut flake topping. I kept the bread recipe the same and left some chucks in the mashed bananas.
For the topping: I combined 1/4 cup sweetened flaked coconut, 1/4 cup brown sugar, 2 tablespoons flour, and 2 tablespoons cubed/cold butter.
I evenly sprinkled the topping over each muffin and baked at 325 for 30 mins. and voilà.. Yummy, yummy banana bread muffins. :)
