Easy Apple Cinnamon Muffins
These were delicious! I made some changes per other reviews: used 2 eggs, added some hot water to thin it out, and used only 1/4 cup butter for the topping. I'm always looking for more ways to get oatmeal into our diet so I subbed 1/2 cup of quick cooking oats for the 1/2 c flour. Oh yeah and I also subbed brown sugar instead of white (it goes better with the oats!). My DH told me to make sure I kept this recipe :)

The Best Ever Chicken Nuggets
These were really good. I like my nuggets sort of spicy so I used some low sodium taco seasoning instead of the garlic salt..I also salted and peppered the chicken before breading. Restaurant quality :) Oh and make sure the nuggets are a nice brown color and they should be cooked through just great! For the person who had 'sticky nuggets' I don't think you fried them long enough...its also important to flour, egg, and flour again :)

Fluffy Pancakes
Update!!: So now another kid later I'm still making this recipe! I've made a few healthy changes though that I thought I would share. I let chia seeds soak in the milk with vanilla extract and cinnamon for 10-15 minutes and then I add the vinegar and let it set for another 10 min. Another thing I've learned (thanks Martha Stewart) is that if you lightly beat your eggs and add them to the to a well in the dry mixture and put the milk on top you won't get eggy pancakes. Also I switched to white whole wheat flour and it makes these pancakes amazing!! One last thing is I triple the recipe to make sure there is enough for my family of four and left overs ;). ~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~ These pancakes are the best I've ever had! I searched and searched while I was pregnant for the perfect recipe (I had really bad pancake cravings) and found this one in the middle of the night. Been using it ever since. In fact just made it for my son who is now almost 2 :). I always substitute the melted butter for vegetable oil I grew up eating it that way.
