Gourmet Chicken Pizza

This was really tasty! I usually make pizzas by buying naan bread as a base, this time I had garlic flavor on hand. To cut down on fat I used fat-free ranch dressing and half the amount of cheese. The supermarket didn't have green onions so I used red, cut very thin and left in half circles and it was great!

Butter Chickpea Curry

This is SO delicious. I took the advice of other reviewers and used cauliflower instead of potatoes for more fiber and less starch. I also used light coconut milk instead of regular milk and it was really tasty! I was wary of using the canned tomato soup, but I would recommend using it, it was one of the ingredients that MADE it! Because I was using cauliflower, I let it simmer for longer than 5 minutes to let the cauliflower take on the flavours a little more. Next time I make this I may add the cauliflower at the point of adding the spices. My boyfriend, who loves Indian food thought I bought it pre-made.

Carrot and Ginger Soup

This soup is so awesome. I make it whenever my boyfriend or i are sick and the ginger clears our sinouses! I've made it with different kinds of squahes and it's always really good. It's so simple and delicious, everyone I make it for, loves it.

African Peanut Soup

This soup is DELISH! I only made half of the recipe because there is only 2 of us, but i wish I made it all to have more left-overs! Instead of regular vegetable broth, I used half Imagine Creamy Butternut Squash Soup (http://www.imaginefoods.com/pages/products/soupbroth/soup.php) and half water. Also, Instead of chili powder I used fresh ginger, which was really yummy and added a great zip to it. I will make this again and again.

Capers and Halibut

I didn't have white wine, so I used balsamic vinaiger instead and it was really really yummy (although probibly not the colour it was meant to be in the original recipe, but still worked really well). My boyfriend said it was his favorite halibut I've ever made.

Green Curry Tofu

We found this recipe to be very bland and extremely spicy. Like the other reviewers, we added come vegetables to make it more substantial (pea pods, baby corn, carrots). Despite the sesame oil and coconut milk, the final result was really bland. I recommend using only one tsp of curry paste (rather than 2 tbsp) and adding garlic and ginger to the stir fry, then perhaps adding cornstarch to the sauce. However, I don't think I'll ever use this recipe again.

Black Bean and Corn Salad II

I made this salad today for my boyfriend and it was his favorite. To make it even better, add some cumin, it goes really well with the avocado and lime juice.

Eastern Rice Salad

I bring this salad to every potluck I go to and everyone always asks for the recipe. I sometimes alter the recipe to make it different, by adding a little sesame oil and using different vegetables. Mmmmmmmmmmmmmmmmmm
