Hearty Ham Casserole

Reviewed: May 14, 2008
I made this last night and it was great. I made a few changes..not many. I added 1/4 cup of cheese to the ham and corn mixture because we really love cheese. I also added crushed Ritz crackers to the top, with the cheese, to give it a little crunch. It came out great...the taste is wonderful and this will be made many more times in our house. I made a salad to go with it..but didn't need it. This dish is very filling.

Jo Jo Potatoes

Reviewed: Feb. 20, 2006
These are great!! I cut baking potatoes crosswise and added a tsp of "Ms.Dash" for a little more spice. Then fried in the deep fryer. They came out crispy on the outside and soft and yummy on the inside. Excellent!! Great recipe..thanks!

I'm not sure there is anything you can do to this recipe that would mess this up. It's foolproof and delicious!! Thanks for a wonderful recipe that is now in our weekly rotation.

Bahamian Mahi Mahi

I tried it and was not impressed. Not sure how "authentic" it is, but it's not as good as the Ginger Glazed recipe that appears here also.

Aztec Casserole

Reviewed: Oct. 27, 2005
OMG...this is going to be a favorite for my family. My husband raved and wants it every Saturday. I used beans instead of corn and added tops of green onions, sour cream and nachos on the top. I used spicy enchilada sauce and added 2 chopped jalapeno peppers because my family likes spicy food. Served with Mexican Rice III from here. Great last minute meal.

Bob's Awesome Lasagna

Reviewed: Oct. 20, 2005
This was a great recipe but I like my lasagna with a little more cheese. I added grated parmesan and used 8oz. ricotta along with the cottage cheese. I mixed 2 eggs and 1 1/2 tsp aregano into the cheeses. I also covered the dish for 30 minutes of the cooking time. Came out great!!

Easiest Teriyaki Marinade Ever

Reviewed: Sep. 1, 2005
This is the "best" marinade I have ever tried! The first time I used it for baked chicken breasts and my husband loved them. Most recently, I used it on butterfly pork chops stuffed with wild rice. After marinating overnight, I stuffed the pork chops and baked for 45 minutes. The marinade even flavored the rice! Great for anything from baked to grilled. Thanks for this versatile and yummy recipe.

Basic Ham and Bean Soup

Reviewed: Apr. 13, 2004
Great recipe!! I'm not big on dried beans so made mine from a mix of canned pinto and northern beans. I prepared the vegetables, spices, broth and ham first, then added the beans the last 30 minutes and let it simmer. The northern beans were almost non-existent, but they added just the right texture so broth wasn't too watery. The pintos gave it a browner color, but tasted great! Will definitely make this again....and again!
