I just got a bread machine, and I've tried this recipe three times. No luck! And I was so inspired by all the great reviews too. I will keep trying, but I'm a novice bread maker so I'm sure I screwed something up somewhere. Maybe it was the oil I used? Twice safflower and once olive - I don't use soybean or canola, your typical vegetable oils. I'm only giving this two starts, and that's because of my three loaves, the one that was the best did really taste good. All three of them caved in, and I did increase the salt. One time I used honey instead of sugar, one time I thought the water wasn't warm enough....it's disappointing, especially when so many of the other reviewers so easily made modifications. I will not give up!
Okay...notes on loaf #4. Decreased water by one T, added one T of vital wheat gluten. It seemed to work. I left in the machine too long after it was done so the crust was a bit overdone for me but the rest of it is really good!
