Quinoa with Chickpeas and Tomatoes

As written this is 3 stars. Use grape tomatoes cut in half, way more parsley, green onions and feta cheese. Then it is a 5 star one. I make this once a week at least.

Sweet Restaurant Slaw

This is hands down the best coleslaw recipe ever. Tastes exactly like what you get at the restaurants. Use Hellman's in place of Miracle Whip and you will have a keeper. Don't change anything else. If I could give it more stars I would.

Classic Macaroni Salad

I was searching for a classic mac salad and came across this recipe. It did not disappoint. I have to say I am not a huge mustard fan, and was a bit worried to see my mixture turn yellow, but it blended nicely with the rest of the ingredients and was not overpowerful. Make sure you chill this the night ahead, as it is much better the next day. This was a huge hit at my BBQ. Enjoy.

Broiled Scallops

Excellent recipe with a few modifications. I used 1/2 TB garlic powder (NOT garlic salt). You can use fresh garlic too. I also added 1TB of vermouth. I think adding wine to scallops makes it so much better when cooking, so use what you have on hand. Also sprinkled fresh pepper on top, with a thin layer of parm cheese. Broil about 6-7 minutes near heat and be careful to not overcook scallops. If you are cooking past 10 minutes, you are overcooking. Scallops should be opaque in middle (medium rare). Serve over couscous and drizzle extra butter sauce. Yummy.

Chuck's Favorite Mac and Cheese

Chuck you rock! Best mac and cheese ever. I even preferred it the next day because it was bit more dry. Kids wouldn't touch it because they only eat real mac and cheese from box. Ha. Anyway, can't go wrong with how easy this is to make. I didn't use all of the topping, but that is something you can easily adjust. Anyway, will be making again when I feel like some comfort food.

Broiled Tilapia Parmesan

I have been making this recipe for a year now, and just realized I never rated it. This is one of my favorite fish recipes of all time. I add about 1/4 cup of Italian flavored breadcrumbs, and I also find that if you put the mixture in the refrigerator for about 15-20 minutes prior, it seems to spread on better to the hot fish. My husband gobbles this down and he doesn't care for white fish at all. You will not be disappointed with this recipe.

Busy Day Chicken Rice Casserole

I thought this was a nice simple recipe. Easy to make and cooked perfectly in about 75 minutes. I did add half of the dry soup mix to the rice mixture to more evenly distribute, but other than that, I followed exactly.

Blueberry Buckle

This was very good. Similiar to a recipe I already had. I add a tsp of vanilla and I cook for almost 45 minutes, but otherwise made as directed. Nice alternative to muffins.

Avocado Feta Salsa

I made this twice this weekend. I needed to bring a dip to a "Mexican inspired" dinner party. First tiime I made as directed. It was good, but bland in my opinion. Second time I made it I changed some things. Mainly went by taste: Used cilantro as others had instead of parsley. Used dried oregano, since that is what I had on hand. Left out garlic, b/c I am not a fan. Didn't measure red wine vinegar, used lime juice and some pepper. I also added some extra tomato. With those changes it was so much better. Everybody raved about it at the party. Will make again.

I thought this was good, but I prefer less onion and cilantro in mine. Will make adjustments next time. Hubby ate it all, so it must have been good. Did like it better the next day after it sat in the fridge.

Spinach Quiche

I thought this quiche was good, but a bit too heavy in my opinion. I like something a bit lighter, but that is me. That being said my family said it was excellent overall so I will give it 4 stars. I made a few changes: I used 2 cloves of garlic, not three. I used fresh mushrooms (would never use canned) and I sauted them with onion and garlic in butter. Called for a stick of butter, which I used, but I think that could be cut in half easily or not used at all--maybe olive oil would be just as good and less fattening. I also used regular feta cheese, not fond of all that garlic. My dish only fit half the egg mixture called for. Maybe I will use 3 eggs and less milk next time--not sure? I guess if you have a bigger dish--10 inch-that might work. I cooked the 15 minutes, then topped with Cheddar, and cooked only about 30 minutes more in my oven.

Grandma Johnson's Scones

I will give a "5" on taste, but prep work was a bit tough, especially if you are not used to making scones. I also found my scones needed to bake at 25 minutes (with a normal oven). At 15 minutes I had raw dough. The scones were very large even cut into 12 wedges. Could easily be cut into additional wedges. However all of that being said these scones are the real thing if you like scones. Perfect just like the bakeries make. YUM. Had to freeze them so I wouldn't eat them all.

Make Ahead Manicotti

I really liked this recipe. It was easy to make a day ahead and then cook when you wanted it. Not sure it was anything special, but a good solid manicotti meal. Hubby said it was better than my lasagna. Only thing I did different was add more ricotta in mix and add moz cheese on top with parm. Anyway, thumbs up.

Blueberry Muffins II

I finally found the blueberry muffin recipe I was looking for! I tried the "To Die For" ones on this site, btu I found those too sweet, not the traditional muffin I was looking for. These came out perfect. Only change I made was to not mash blueberries in batter and I only used 2 cups b/c that is what I had. These muffins lasted two days in my house. Yummy.

Peanut Butter Cup Cookies

I don't eat peanut butter so I can't personally say if these are good, but everybody who ate them really loved them, so i would say they are top notch. I had to put in fridge for about an hour to cool them before I took out of pans. The mini muffin pans worked well and they made a nice presentation. Will make again.

Banana Crumb Muffins

I thought these were very good. I think the topping needed more cinnamon, not sure exactly, but had a great flavor overall. Also, so easy to make. My almost 3 year old who won't eat anything ate two of these mnuffins. I will be making these again.

Blonde Brownies I

Seriously good. Was looking for a blonde brownie recipe to rival my mother in law's. This is it! Came out perfect at 25 minutes. My only change was to mix in chips, but otherwise didn't change the recipe at all. I will say even better the next day--if you don't let them cool, they are too gooey. I like more of hardened brownie. YUM!
