I thought this quiche was good, but a bit too heavy in my opinion. I like something a bit lighter, but that is me. That being said my family said it was excellent overall so I will give it 4 stars. I made a few changes: I used 2 cloves of garlic, not three. I used fresh mushrooms (would never use canned) and I sauted them with onion and garlic in butter. Called for a stick of butter, which I used, but I think that could be cut in half easily or not used at all--maybe olive oil would be just as good and less fattening. I also used regular feta cheese, not fond of all that garlic. My dish only fit half the egg mixture called for. Maybe I will use 3 eggs and less milk next time--not sure? I guess if you have a bigger dish--10 inch-that might work. I cooked the 15 minutes, then topped with Cheddar, and cooked only about 30 minutes more in my oven.
