The Right Choice Chocolate Chip Cookies
I made one change, and that was to use vanilla extract instead of coconut. We don't have coconut extract, and I just don't like coconut in general. I also used a rounded tablespoon to scoop out the mixture onto the tray and got 48 small-ish cookies out of it. I also cooked them for exactly 10 minutes, took them out and left them on the tray for a minute or two to cool down before transferring over to a rack. A guest claimed that they're SO MUCH BETTER than the recipe on the back of the Nestle Tollhouse package and wants the recipe. My sweet-toothed husband is now a big fan of them and wants me to keep using this recipe...so I will. The chocolate chips in the middle were really gooey. Good stuff. :-)

Iced Mochas
My husband was expecting Iced Coffee instead. I told him 'No, it has chocolate syrup in it, too', because I don't like plain iced coffee. Mochas it is for me. He loves it. I love it. He says it's better than Starbucks. I've never had Starbucks iced mochas, so I can't compare. He is a coffee fanatic. We've made it a few times since, and it does NOT need tweaking.

Vanilla Ice Cream VIII
This was good, although the vanilla was a bit overpowering. I used it as a base and steeped some fresh chocolate mint in the liquid overnight, then added some chocolate chips towards the end of churning. It didn't turn out too bad. I think that, next time, I'll use half the vanilla extract and try half-and-half instead of milk...just to see how much of a difference there is. Still, it has a good flavour for a regular vanilla icecream.
