Quick Chinese-Style Vermicelli (Rice Noodles)

This is yummy, but I did make the changes that were suggested by other reviewers. I used sesame oil instead of vegetable oil, and I added fresh ginger, grated carrots and snap peas. I also doubled the sauce. We had it as a side dish, but it would be really good with shrimp or chicken added too. REALLY easy to make - will make it again.

Roquefort Pear Salad

This salad is fantastic. Great flavors! I did cheat and bought some candied pecans...only because I didn't have time to make my own. Definitely a keeper!! thanks :)

Vegetarian Refried Beans

These were GREAT! I added the tomato, but didn't add the oil (actually, I forgot). Didn't seem to make any difference. Everyone gave these rave reviews - even my 5 year old!

Mocha Chocolate Chip Banana Muffins

Yum!! I followed other reviewers advice and used 4 bananas, 3 tbs of coffee granules and only 1/2 cup butter. I made 1/2 the mixture as muffins and the other 1/2 as mini loaves. The muffins were delicious, very moist and great flavor. The coffee is not really a flavor, more of a flavor enhancer, I think. As delicious as the muffins were, the loaves were incredible. Took them to work and they were gone sooo fast. Will definately make this again.

Creamy Banana Bread

Sorry, this recipe was not as I anticipated. The bread was very dense, the top came out almost over-done and even though I left the bread in the oven for longer than the recipe stated, the bread was under-done. I thought the pecan mixture would caramelize more. The bread also sank after it came out of the oven. All-in-all, it was ok, but I won't make this again.

Asian Salad

Excellent salad. Everyone LOVES it. My husband said it is his new favorite salad. The only addition we made was to garnish the salad with a few mandarin oranges. Yum!! Thanks Juanita :)

Three Ingredient Peanut Butter Cookies

Great recipe. Found this in a kids cook recipe book and could not believe it only had 3 ingredients. Very easy and the kids LOVED making the cookies. Hubby loved eating them too :) This is definately a keeper!!

Persimmon Bread II

Fabulous!! I made this several times using both common types of persimmon (The Japanese type made better pulp although both tasted great). This is easy to make and incredibly tasty. I made this as Christmas presents and everyone who received it asked for the recipe. Nuff said! :)

Fruit Pizza

Loved this recipe - easy & tasty! I used catfish, ranch dressing (which I spiced up a little) for the marinade and BBQ chips for the topping. Will definately make this again :)
