Iced Pumpkin Cookies

Pretty dang good. I used the whole 15 oz can of pumpkin, simply because I knew it would go to waste otherwise. Still turned out great for me!

Blueberry Lemon Bread

Pretty tasty, especially considering how quick and easy the recipe was. I ended up having to bake for 65-70 minutes, but then again I have a wonky oven. My one suggestion is to make a glaze, as I made one and it added to the bread considerably. I mixed confectioner's sugar with milk until I got a good consistency and squeezed in 1/4 of a fresh lemon. Highly recommended.

Old-Fashioned Strawberry Shortcake

I made this a "blueberry strawberry shortcake" by well, adding blueberries. I baked this around the 4th of July last year and made a little flag design by using a rectangular baking pan, spreading whipped topping, and using the blueberries and strawberries to make an American flag. The shortcake itself was a little dry for my taste, so next time I'll be careful not to overmix and perhaps will add a bit more butter or cream.

Ultimate Maple Snickerdoodles

I made these for a work "food day" and they were a hit. I did use real maple syrup but my closest grocer didn't stock maple sugar so I went with the sugar/cinnamon topping. They were still worth five stars, so I can't imagine how great they would be with maple sugar! The cookies were done after 8 minutes even though they looked a little doughy, so I suggest taking them out even if you feel unsure.

Chocolate Chip Cookie Ice Cream Cake

The greatness of this recipe is how truly adaptable it is. I'm not sure you could say I even followed this recipe by the time I was done adding and tweaking. However, it was a bit hit, so here are my changes. I used crushed oreos with margarine as the bottom crust. I then spread melted fudge and put chocolate ice cream over that. My next layer (after freezing) was a bottle of that magic shell chocolate. It gave such a nice crunch! Before the magic shell could freeze I put more crumbled oreos on top. After freezing that layer, I topped off with a layer of chocolate chip cookie dough ice cream. The different oreo layers with extra fudge made it very similar to Dairy Queen ice cream cakes.
