Ever get a food idea in your head and just HAVE to make it right then? Well it happened to me last night, maybe it was all the read, white, and blue, but a strawberry cake sounded really, really good.  Some excellent recipes on here but I didn't have all the ingredients to any of them, thus the improv.  Using the Strawberries and Cream cake recipe as a guide, I began.  The only strawberries I had in the house were frozen, so into the Ninja they went for a quick puree.  The recipe called for strawberry gelatin mix but I used 1/4 cup of puree instead.  No cake flour so in went AP flour.  Folded more puree in until I got the marbled effect.  Cake rounds just aren't practical around here unless it's a special occasion, but a 9x13 does suit us very much.  Into the oven it went and I have to admit I didn't set a timer or make note of how long it baked.  I use the nose method to know when to check it, I've found that when I can really smell it then it's done.  Cooled for a while and that's when I really veered off course.  After poking a few hole in the cake, I mixed a small amount of puree with a bit of half-n-half and brushed a generous amount on the top.  More cooling time while I mixed together some frosting.  I absolutely love cream cheese icing and was kicking myself for not buying any at the last grocery store run, so a used decorator's icing instead and added even more puree and half-n-half instead of milk.  Another confession, I iced before the cake was completely cool and immediately cut out 2 pieces to get the hubs approval.  It was yummy, like a warm strawberry shortcake!! It would've been better with the cream cheese icing but this was a good start and a great improv!   Wonder what I will think of next?
