Chocolate Chip Banana Bread II

Wonderful banana bread! I made 12 muffins (baked in 30 mins.) and 24 mini muffins (baked in 20 mins.) I followed recipe exactly, execpt I omited the chocolate chips and the nuts. The muffins browned beautifully and formed a crisp crust with a tender, moist center. Thanks!

Very Berry Muffins

The only modifications I made were 1 c. ap flour and 1/3 whole wheat flour for the 1 1/3 ap flour and I used mixed fresh berries (raspberries, blue berries, black berries, and a few strawberries.) I DID think 1 TBS. of baking powder was excessive, but I don't like to change a recipe too much when I first try it. On a positive note, the muffins looked beautiful and the texture of the bread was good.

Jumbo Fluffy Walnut Apple Muffins

Delicious, fluffy, just the right crunch on top, I had to stop myself from eating two of them as I was taking them out of the pan!!! I substituted 3/4 whole wheat flour, used 1 tsp cinnamon in batter, and used 3 apples, 1 shredded and rest small diced. The walnuts were small diced, too. The tops did not dome for me...maybe I put too much crumb topping on top...? Excellent flavor!!! Thanks!

Salisbury Steak

This is such a great recipe!! Only changes I made were to double the gravy, use 1/2 of the ketchup, and add fresh mushrooms. Finger licking good with mashed potatoes or brown rice!!

Surprise South Beach Mashed 'Potatoes'

I give it a 2 because of the modifications I had to make. Ok, people this is a SIMPLE RECIPE! I boiled the cauliflower(a whole head) until very soft and almost transparent. To me-that is the trick: boiling it to death. (I'm sure I kill all the nutrients out of the veg. but it tastes so comforting that I really don't care!) I also added a large chicken bullion cube to the boiling water. After I drained it well, I put it back into the pot and added 2 slices (or more-it's up to you) of DELUXE (it's real and creamier) american cheese, put the lid back on and let the cheese melt. Then I blended it WELL with a hand mixer. My family has been eating this as a substitute for mashed potatoes for years now. We love it and hope you will too!!!

Banana Pancakes I

EASY and yummy. I halved the recipe and made these for my 2 year old. He loved them. Didn't change anything else. Thanks! UPDATE: I now use this recipe for my standard pancake/waffle mix. Changes: I use all-100% whole wheat flour, 1/2 tsp. vanilla, 1 1/2 tsp. baking powder, 1 tbs. olive oil. I have a cheapie waffle maker and they come out perfectly! It makes a perfect 4 double waffles or 8 (1/4 c.) pancakes. I just make a full batch and freeze the rest and microwave 1 at a time for picky toddler's healthy breakfast.

Cut-Out Cookies in a Flower Pot

This is my standard sugar cookie recipe. I half it often and it turns out perfectly every time. They are delicious and if you roll them out to 1/4 of an inch, they are soft inside and crisp on the edges. I don't do the lollypop sticks, too much trouble for me! Thanks!

Brown Rice, Broccoli, Cheese and Walnut Surprise

DELICIOUS! I just changed it a little bit: In a 10 inch skillet I sauteed about 1/4 lg. onion diced small on low for about 10 mins. in butter and oilve oil. Then I added about 4 sm. cloves of garlic chopped small and cooked for about 1 min. more. Added instant brown rice and fried it for a couple of mins. in the mixture. Added 1 c. CHICKEN broth, brought it up to a boil, then covered it and turned it to super low and cooked it until all the liquid absorbed (10 mins?). Tossed in the frozen broccoli I had already steamed and about 1 c. finely shredded "mexican style" cheese (that's what I had in the fridge). I divided it in two servings (my hubby and I loved it THAT MUCH!) and topped it with the toasted walnuts. YUM! Oh, we also had some baked salmon along with it. The salmon took a backseat to this wonderful rice dish. Thanks Candice!

Mandarin Orange Cake I

I made this cake for my Mom's birthday, per her request. Very easy to make! Hubby said best cake I've ever made and picky sister-in-law said that this was her new favorite cake, better than one's she's had from restaurants! I made it the day before so it could chill completely. Used Duncan Hines butter yellow, added 1 tsp. butter extract in batter, used 15 oz. can oranges and used the hand mixer to break them up throughly. Made 2 thinish, but super moist 9" round layers. Frosting: Used 1 tsp. coconut extract and the smaller box of vanilla pudding (fat free & sugar free-that's what I had) and it was just delicious. Added some sweetened coconut to sides for decoration along with drained, crushed pineapple on top. Gone in 2 days, hubby wants another one!

J.P.'s Big Daddy Biscuits

I used all butter (grated in, frozen.) I prefer the dough to be slightly wet and do all my mixing/kneading in the bowl with a spatula. I turn the sticky dough onto a floured surface and sprinkle it with flour and roll it quickly into a thin sheet. I followed another review and folded the sheet over once (if its too sticky, just use a knife or bench scraper to help it over.) Then use a floured cookie cutter to cut out 8 med. sized biscuits placed spaced apart in a foil lined cookie sheet. Brush melted butter on top of each and baked mine for about 12 mins. always checking after the 1st 10 mins. Oh, I also bake them on a rack moved up to the second highest level otherwise the bottoms get too brown before the tops get a chance to. Very delicious! Thank you, John!
