Sister Slaw

only had kale and added slivered red pepper. Did not have limes, used white balsamic. Used some brown sugar becuase I was skeptical of the syrup. But I did add the syrup at the last minute as well. This was a really yummy salad. Even my husband loved it and he does not usually eat kale!

Baked Zucchini Chips

Used extra garlic powder as suggested by other reviewers. I used panko, which was ok, but didn't stick as well. I will use regular bread crumbs next time. Husband loved them too!

Chicken Pesto Sandwich

This was yummy. Used this for some leftover chicken we had. I used white balsamic instead and no feta, and melted provolone on the top. Really hearty sandwich. Great way to get extra veggies into my husband!

Six Can Chicken Tortilla Soup

Love it!!! I can see that it could be versatile with other add ins. But I love it just as it is ! Could not be any simpler! I do top it with fresh diced avocado, cilantro and of course tortilla chips!! YUMMO!

Slow Cooker Chicken Stroganoff

I really like this recipe. It was easy. I used frozen chicken and I did add in some chicken broth to keep it moist. I think it is a little too thick, so I just added in more chicken broth. I was making this for another family, so I didn't add anything. But I can see how versatile this recipe could be, by adding in fresh mushrooms and peas and carrots or even broccoli, or even going fancy and doing spinach, artichokes and sundried tomatoes. Easy and delicious as is though! I used whole wheat noodles too and the low fat cheese and soup. I doubled this and 1 packet of dressing was plenty.

Zucchini Egg Bake

Yum! This was a huge hit! I had swiss, so that is what I used. Also, I didn't have marjoram, so I added a bit of thyme. Great recipe and hearty enough for a meal with a side salad and bread!

Baked Mashed Potatoes

I am not a big mashed potato fan, but these were incredible!! and easy. They were so fluffy and yummy. They rose like a cake, while baking! Next time I will kick them up with garlic or horseradish!

Dijon Grilled Pork Chops

Yummy!! My kids ate them up! I used the reserved marinade as a sauce instead! I didn't have apple juice on hand, but I did have some honey bourbon that was not being drunk, that was delicious! Marinated it overnite. I did add apple juice to the reserved marinade the next day and it made a wonderful rich sauce.
