Crustless Spinach Quiche

Delicious - I did not like to saute the onions first - I like them to have a bit of crunch. I added some Italian herbs and crushed red chilies as well as a red jalapeno. You do not need to add any salt. The cheese has enough salt for the dish. I used a blend of organic cheddar cheeses - feta would be really good too. Fresh spinach works well just saute and allow to cool. I also wanted to serve this in square pieces with more height so I added an extra egg and baked it in a square glass 8x8 baking dish. Worked great! Easy

Sugar and Spice Muffins

Pretty good. Kids really liked them. They taste better if you wait until they are cooled off. Next time I'll add vanilla. Also I only got 11 small muffins from one batch. Thanks for sharing.

Raspberry and Almond Shortbread Thumbprints

Too sweet. The glaze is not able to drizzle with only 1 tsp of milk and 3/4 tsp almond. The 3/4 tsp of almond is overpowering for the glaze and the cookies are so sweet that they don't need glaze anyways. Otherwise they came out right. I used home made cranberry which made them look festive.

Crustless Cranberry Pie

You will not need to change a thing for this recipe. I added more walnuts and a tiny bit more almond extract for the second one I made which was the next day. Wow - so good and so easy to make. This is another good one for kids to do.

Apple Pie by Grandma Ople

This recipe is perfect. No need for spices or vanilla. It's also very easy. I used two frozen 9" pie crusts. I did not need as much apples as the recipe called for I used about 5. I think the tins from the store are smaller. I did use all the caramel in the pie though. It does not need more sugar like some have suggested.

Danny's Macaroni and Cheese

This is a very easy dish and could be made by a little kid. I think I'll teach it to my 17 year old son :). There is no need to double the cheese like some people have done. It's already very cheesy. Make sure to let it cool off before you eat it or the cheese will stick to your teeth. I doubled the recipe and added two cloves crushed garlic, a tsp dried basil, a 1/2 tsp crushed red chili, 1/2 tsp cracked black pepper. It was moist and flavorful. I will add a bread crumb topping next time. This dish is similar to one I used to make in a skillet with peppers and onions. I learned it from my Grandmother. She used bacon but I am vegetarian so I use and olive oil. Be sure to use Brown rice pasta. It is so much healthier for you and won't raise your blood sugar.

Banana Cake VI

Moist is an understatement. I bake a lot and followed this recipe exactly. It takes about 30 minuets longer to bake than it says. The cake is dense with mushy spots and too sweet. Like undercooked banana bread. I was very disappointed. My family liked it - Won't make this again. I have a really good Banana Bread recipe. ;(

October Oatmeal Pumpkin Muffins

This recipe is a keeper. I was worried because it seemed like it needed more flour but it did not. I followed as written except I added 1/4 cup unrefined coconut oil (I'm not on a low fat diet). The cooking time is more like 35 minutes. These are the best. Moist and not too sweet - with a very nice texture. Yum! Also I made my own pumpkin pie spice mix and used the recipe: Pumpkin Pie Spice II for these muffins and it is a really good blend.

Greek Lentil Soup (Fakes)

I gave this recipe 2 stars because it has too much garlic and not enough flavor. Also the boiling and draining proved to be an unnecessary step. I love garlic but this calls for about twice the amount it should. I used sweet mayan onions and would not recommend using the sweet onions because the sweetness of the carrots and bay leaves is enough. I added one diced celery stalk to this recipe and an additional one and a half teaspoons of tomato paste for more flavor. It does need a more spice. I added a tsp paprika and 1/4 tsp red chili flakes. I also added 2 cups fresh baby spinach leaves and drizzle with extra virgin olive oil after I turned the heat off. The vinegar helped balance the sweetness and cut the over powering garlic. I used about a tsp of vinegar in my bowl. It was better the next day. The garlic seemed to mellow out.

Lemon Poppy Seed Bread

I was not sure why the recipe called for baking in 3 - 8x4 pans but I followed the recipe and think they could have been baked in two 8x4 pans or a Bundt pan. It's good but next time I will double the poppy seeds, add fresh lemon juice, and bake in a bundt pan. The sides of the bread clung to the pan and rose faster than the center as it baked - I'm not quite sure why it did that. Perhaps the pans should be dusted with flour as well. I omitted the glaze this time. Overall it's good :)

Macaroni And Cheese I

I like the tomato in this dish. I used one chopped fresh tomato rather than a can of tomatoes. The tomato makes this dish delicious. This recipe makes a small amount so you will need a small baking dish. It does need more milk and cheese. I increased the milk and cheese by 25%. I also doubled the garlic and added freshly ground black pepper, crushed red pepper, celery flakes and chopped fresh parsley. It works well with whole wheat pasta. Remove the pan from the heat before you add the cheese. Also cook the pasta a touch underdone since it is going bake for 40 - 45 minutes.

Chocolate Zucchini Bread

This recipe does not have enough chocolate. I made it a second time and doubled the coco powder added 3/4 cup chocolate chips. This was a huge improvement. Next time I may reduce the sugar as well. I omitted the raisins, nuts, cinnamon, and almond extract due to preference.

Outrageous Chocolate Chip Cookies

Awesome. These came out perfect! Nice and thick cookies. I made them extra large size using 1/4 cup of dough per cookie and baked for about 15-16 minutes.

Dannon Blueberry Coffee Cake

I made this according to recipe. with one exception - I used a different brand of organic plain yogurt. This is a moist cake but I think there is too much yogurt in this recipe. The tanginess of the cake does not go well with pecans. Also the cake texture is almost rubbery in appearance after it cools off. I don't plan to make this one again.
