Salmon Cakes II

Excellent. Baked them at 375 for 20 mins and then browned them in a pan. Used fresh leftover smoked salmon and used 2 eggs instead of one. Thanks for the recipe!

Chantal's New York Cheesecake

Mine cracked on both tries, but love the recipe anyway. Not quite as heavy as "Basic Cheesecake" which is also good, but I think this might be my new fav. Thanks for sharing!

Marinated Grilled Shrimp

Wow - amazing flavor. And I used cooked frozen jumbo shrimp and broiled them in the oven. I also used dried spices vs fresh and this was a hit. Will do again with fresh everything just to compare. Can't wait, based on all the reviews.

Chicken Florentine Casserole

Rave reviews from the family. Agree that its not necessary to cook the chicken first. Also wondering if its necessary to saute the spinach ahead of time. I used fresh spinach, sauteed it lightly in butter, but next time might just dampen it and lay it on the bottom. Would add more mushrooms next time, and I only used half the mozzarrella cheese.

Wow. Really really good. Used Apple sauce for half the oil and used half brown sugar. Kids loved the loaf with nuts and chocolate chips. Thanks!

Chicken and Biscuit Casserole

Devoured at Sunday dinner! Even though I usually send home some with the grandparents. Made it with a rotisserie chicken and frozen biscuits. Also added mushrooms and forgot to cover it with foil, but it was still darn good. Something very basic about carrots, celery, onion in a casserole that is fab. Next time I might leave out the sugar. Not sure its really needed. An extra roll of biscuits helped stretch the meal out for more folks. Thanks!

Roast Chicken with Rosemary

Really easy and good - added a lemon and some garlic too in the stuffing. Only issue is that potatoes didn't get very crisp as they were jammed around the bird. But a hit nonetheless.

Awesome and Easy Creamy Corn Casserole

As everyone said - a hit with the crowd - hard to top. Next time will try low fat sour cream per other suggestions, and maybe reduce the butter. Took about an hour to cook and was not as firm as I'd like.
