Best Brownies

DELICIOUS! I halved the recipe because I don't like to have too many sweets at home and I baked them in a mini muffin pan for 14 minutes -- PERFECT!!

Stabilized Whipped Cream Icing

SO happy that I found a whipped cream recipe that allows my whipped cream to sit! I piped this onto cupcakes, refrigerated the cupcakes overnight and they have been sitting at room temperature for about 5 hours now and the whipped cream frosting is still set! Few changes: use 1/2 tsp gelatin powder with 1 tbsp cold water for every cup of cream, use powdered sugar (you won't get the granules and it also has corn starch which also allows the whipped cream to set), microwave the gelatin mixture for about 15 seconds -- 3 minutes is crazy.

Pico de Gallo Chicken Quesadillas

This was delicious! I made a few modifications outside of halving the recipe: Used green chilies instead of jalapenos, used ground beef instead of chicken, omitted the 1/2 sliced onion and used mozzarella cheese instead of Monterey Jack. I used all the pico de gallo filling inside the quesadillas instead of serving it on the side. This was wonderful, rave reviews from my husband as well :)

Asian Stir Fry Sauce

This turned out good in the end but only after several alterations to the original recipe. 1) Only use 1.5 tbsp of corn starch otherwise it gets way too thick. 2) Omit the brown sugar and add 2 tsp of white sugar. 3) I used white wine instead of dry sherry. 4) I used vegetable oil instead of sesame oil. 5) I added sesame seeds to the sauce. 6) I added minced serrano peppers to the sauce. 7) I used white vinegar instead of rice vinegar. 8) I used 1/4 cup corn syrup. 9) I had to use about a 1/2 water to cut the strong taste of the sauce. Once it was mixed into the rice and chicken and veggies it was delicious but on it's own it was a little strong.

Fiery Fish Tacos with Crunchy Corn Salsa

THESE WERE AMAZING! Some changes I made: Used 1 chopped tomato instead of jicama, omitted the red bell pepper, added a chopped serrano pepper to the salsa, added a chopped avocado to teh salsa and added more cayenne pepper. The balance of the cool sour cream with the spicy fish is perfect. I will definitely be making these again.

Marinated Grilled Shrimp

Wasn't the BEST but it was quite good!! I added Sriracha to the marinade as well as lemon juice. Next time I will add more garlic and maybe slit the shrimp so it really soaks up the marinade.

OMG SO GOOD! Cut the sugar in half, omitted the walnuts and baked at 325 for 12 minutes in a mini muffin pan! My husband ate FIVE!

Soft Sugar Cookies IV

OMG these were AMAZING! I substituted butter for the shortening (I never have shortening) and I didn't roll the dough in the granulated sugar. After the cookies had cooled, I topped with funfetti frosting. I brought these into work and they were devoured within minutes. Bake for 8 minutes for a PERFECT soft cookie.

Best Steak Marinade in Existence

I give this recipe 5 stars based on my modifications. First of all, I was just cooking for my fiancé and me, so I halved the recipe. In place of the garlic powder and minced garlic, I used one clove of chopped fresh garlic. I used fresh basil (about 4 leaves chopped) instead of dried and I reduced the amount of oil and lemon, although not by much. I also added red chili flakes instead of hot pepper sauce. I marinated overnight and this is similar to a korean bbq type of marinade but not as sweet. Regardless, it was DELICIOUS! My fiancé loved it too and he's a very cultured food man :)

DELICIOUS with the following modifications: doubled amount of onions, halved amount of bell peppers, used 2 tsp sugar instead of honey, used half the amount of red wine vinegar, added 1 tsp corn starch to thicken sauce and added 1 tbsp Worcestershire sauce.

Szechwan Shrimp

This was SO delicious!! I doubled the sacuce (but didn't double the ketchup, cornstarch and honey), I used fresh ginger instead of ground, I added mushrooms and bell peppers and onions and jalapenos and I added LOTS of Sriracha!!

Baked Teriyaki Chicken

I personally enjoyed this recipe but my husband thought it was WAY too salty. If I try it again, I will use reduced sodium soy sauce. Double the sauce!
