Delicious Ham and Potato Soup
Really yummy and super simple! My only complaint is, that it didn't quite serve up 8 servings (I ate this as a main course for dinner/lunch). I was going to cut in half, but then saw how little liquid there was so bumped it up for 8--so glad i did! I got about 6 servings (max) out of this--therefore, in my opinion the calorie count is a little off--but still pretty good for a creamy soup. I did not peel the potatoes and since I have never made a ham, I used ham cubes that I bought at the grocery store. Will definitely be making this one again!

Tomato Basil Soup I
Pretty good. As others noted, it isn't a thick based tomato basil soup, but it is good nonetheless. I actually made this twice within a matter of days, it was so easy and I had extra tomatoes on hand. The second time, I did try to thicken it with flour and succeeded to a limited extent. What I liked about this recipe is that I can get all the ingredients (I live in Germany), and I don't need lots of kitchen equipment (i.e. an oven or blender), and it tasted good!

Mexican Soup
This was great! Such a hearty soup and so easy to make! I asked my boyfriend whether he liked it and got a resounding, "Mhmmm..." I added 250ml more chicken broth, because the 850ml didn't seem like enough (I am not really good at measuring out ingredients and just throw them in as I see fit). I used canned goods this time, but will make it with fresh foods in the future to lower the sodium.
