Pot Stickers (Chinese Dumplings)

This recipe turned out fantastic! It has an amazing, authentic flavour. I just have a few things I'd like to point to novices like me: 1) Blenders do NOT make a suitable replacement for a food processor. I thought it would work, but it just turned my shrimp into this disgusting liquid. (Next time I plan on mincing the shrimp by hand.) 2) I couldn't find round gyoza wrappers, so I bought wonton wrappers instead- this made a good substitute. 3) When freezing, remember to freeze the pot stickers partially first on a baking sheet without toughing. Then you can place in a freezer bag. 4) This recipe as is makes A LOT of filling. I had almost enough to fill two packs of wonton wrappers (~56 in each). Take that into consideration when doing it yourself. 5) When frying the pot stickers, do not use too much oil. Since there was no measurement of how much to use, we used quite a bit of oil, and it made them a bit too oily for our liking.

Banana Bread V

I was a bit sad when I lost my own banana bread recipe and had to go looking for another one, but this recipe was a great find! Very easy to make, very tasty. I did make a few changes : 1/2 cup each brown sugar and white sugar; added 1 tsp vanilla and 2 tsp cinnamon; and used less milk, about 3 1/2 tbsp. I also used two mashed bananas, which gave the bread the perfect amount of banana flavour. Be sure to fold in the walnuts (or another substitute) to get it mixed in just right.

Strawberry Cake from Scratch

The batter looked promising, but it took twice as long to look and feel (toothpick test) baked, and then when I cut into it, it was a disaster- mushy and inedible. Will not be making again.

Salsa Chicken

I didn't have any taco seasoning, so I just seasoned the chicken with salt, pepper, garlic powder and cumin. Poured salsa on top and baked. It was really good, but nothing really special either. Will make again, but not exactly sharing it with all my cooking buddies.

Chicken a la King I

This took a lot longer to make than I had originally thought it would. I used different veggies (what I had) and it turned out pretty good, though there was a strong veggie to chicken ratio in favour of the veggies. I used less water to make a bit of a thicker sauce. Next time I would chop the chicken differently- my pieces were too big and too few. Overall a good recipe and would use again, just nothing super fantastic.

Chicken Cacciatore

Turned out fantastic! My hubby and I both went for seconds. I made a few adjustments due to not having all the ingredients listed. I used two soft tomatoes chopped instead of the stewed, and had a tiny bit less tomato sauce. I cut the onion and pepper into large dice. Tasted fantastic over rice.

Broccoli, Rice, Cheese, and Chicken Casserole

Turned out really great. We made a few adjustments as per other reviews and what we had on hand. Real chicken breast chopped up; cream of chicken and broccoli soup; more cheese; frozen mixed veggies.

Creamy Potato Leek Soup II

This soup was delicious! I was a bit nervous to make it since I've never had leeks before, but my partner and I both found it wonderful! It was also really easy to make. I made a few changes. I used milk instead of the cream, chopped two cloves garlic and added to the potatoes, and substituted one sausage since my partner and I don't eat bacon. I mashed the potatoes a bit before adding the leeks and sausage, and then let it simmer a bit longer to thicken slightly. When I was cutting and frying the leeks, it did seem like a lot, but don't worry, cos the soup tasted just fine and was quite flavourful.

Upside-Down Coffee Cake

The cake was good and filling. I used one can of peaches that filled my 9x13 pan perfectly. I read some reviews that said to add some fruit to the cake itself, and used a container of raspberries- totally unnecessary and I think it actually took away from the peaches. It had a very strong cinnamon taste, though I think my partner may have added a tbsp instead of a tsp. I think it could be better, just not sure how.

Homemade Mac and Cheese

Very good and very filling! When I was making the sauce, it looked like there was too much milk, so I only used 2 1/2 cups of milk. I used mozzarella cheese and no parm. When pouring it over the noodles, it did seem very runny, but it thickened nicely in the oven. I did read reviews of it being too bland, but I personally thought it tasted great, just like the way mac and cheese should taste!

Classic Peanut Butter Cookies

These were PHENOMENAL! The only change I made was rolling them into balls, then gently, forking them only a little bit flatter. This way when they baked, they didn't completely turn into peanut butter disks.

Burger or Hot Dog Buns

These buns turned out amazing! They were light and fluffy, and tasted exactly like hamburger buns. Definitely could not make 12 buns out of the amount of dough. We ended up making 8 large buns, and had enough dough left over for a small bun. So one could probably make 9 regular sized buns, or just 8 super sized buns!

Best Bread Machine Bread

This was the first bread I tried in my new bread maker and I was highly disappointed. Granted, it was the first bread I've made, and I could have messed things up because I didn't know better, but I followed the recipe to the letter and it came out hard, lumpy and tasting terrible.

Spumoni Chocolate Chip Cookies

These cookies turned out fantastic- I made them for a Christmas cookie exchange. My only disappointment was that it tasted too much like just 'regular' chocolate chip cookies. I expected something more flavourful from the pistachio pudding, pistachios and cherries in the batter. Next time I will put 1.5 the amount of cherries indicated.

Garlic and Leek Ditalini

I've tried this recipe a few times now, and I just love it. The last time I made it, I used half heavy cream, half milk. I also chopped up and browned some chicken breasts, which went so well with the sauce and pasta. Definitely a keeper recipe.

Three Cheese Garlic Scalloped Potatoes

This is a fantastic recipe! First time I ever made scalloped potatoes and they turned out wonderful. The only changes I made was to mix the cream with the seasonings and garlic so it was easier to layer with.

Zucchini Patties

Loved this and it reminded me of cauliflower patties my mum used to make when I was little! The problem was that they were too wet and didn't cook all the way through. I followed someone else's advice and used instant mashed potatoes instead, which did make them taste better, but they still wouldn't cook all the way through without burning.
