Baked Buffalo Wings

This was a great recipe. Based on several others, I did make a few changes to the cooking process--but not the ingredients. I "dried" the wings for about 10 minutes between layered sheets of paper towel. I put all the wings in the flour mixture, tossed, and left them right in the bag while they sat in the fridge for an hour. I baked them on metal cooling racks perched on top of a foil lined cookie sheet, and dipped them in the butter/Frank's mixture after baking. They were absolutely delicious and will be a staple for future parties!

Ham with Redeye Gravy

This was fantastic. Just used a pat or two of butter, like others previously suggested, and maybe 1/3 cup of strong coffee. No salt was needed, because the ham and butter already had plenty. Using less coffee just meant it turned into more of a glaze as it reduced. Reminded me of my childhood and weekends with my grandparents.

Garlic Cheddar Chicken

This was delicious and my boyfriend, who is very health conscious and typically sticks with one serving at a meal, was quite sad to find out I had only made two chicken breasts. This is definitely a keeper and would be great for a dinner party. I used panko and I sprinkled cheddar on top instead of putting it in the crumbs. I baked it with the roasted broccoli recipe from this website and there were zero leftovers of anything. Awesome recipe!

Pad Kee Mow (Drunkard's Noodles)

Wow......this recipe is over the top delicious. I did not have palm sugar so I substituted brown sugar. I added some broccoli and mushrooms and only 1/2 package of dried wide rice noodles. If you are not used to using dried noodles, the best thing to do with these rice noodles is to pour boiling water over them and let them sit 3-8 minutes until tender. Then, drain and let them sit in cold water until you are ready to add them to the pan. Thanks for sharing this awesome recipe. I was craving Thai food and was extremely happy to create something so authentic in my own home--for a LOT less money. I highly recommend using Thai basil in this recipe--it has amazing flavor!

Turkey and Quinoa Meatloaf

This was absolutely delicious. I have to admit, I was fairly skeptical but after reading the reviews, I thought I would give it a shot. I did use a higher fat content of turkey instead of the extremely lean ground white turkey. I think that the addition of barbecue sauce next time would make it even better; this time I just mixed some in with the sauce for the topping and served some on the side as well. I don't know if using a higher fat content defeats the purpose of cooking with turkey at all, but it was very good and I will be making it again. In the future, I may try using ground turkey breast with either shredded apple or zucchini to add some moisture. My boyfriend cleaned up all the leftovers which was so disappointing to me...I was looking forward to cold meatloaf sandwiches with spicy mustard! Next time I'm hiding the leftovers.
