Butternut Squash Soup

SO GOOD!! This recipe is awesome! I don't use all the cream cheese, about 1 1/2 packages is perfect. I also love to serve it with a dollop of sour cream (the warm soup and the cold sour cream are great together) and spinkle it with cinnamon... try it next time! *UPDATE: Still making this recipe after 2 years... still love it!

Banana Sour Cream Bread

FANTASTIC! I made this recipe 3 times before I really feel like I got it just right! Here are my discoveries: 1. I added just a dash of nutmeg and ground cloves. 2. I halved the recipe and made two 7 1/2" x 9" loaves, but the first time I used the temperature and time given in the recipe, resulting in two doughy (but delicious) uncooked loaves. If making two loaves, do 325 degrees for 1 hr 10 mins, they bake perfectly! 3. I can't really make the butter and sugar in the beginning "cream" together, there's just too much sugar, (but don't change the sugar amount!) So don't worry if it doesn't look creamy. 4. I used an electric mixer to mix the wet ingredients together, but I hand-mixed the flour into the mixture. Try #2 I used the electric mixer to incorporate the flour, the loaves turned out to be a bit too light and airy for me, like cake. Hand-mixing in the flour created a denser, more bread-like consistency. 5. Making a crumbly topping is a MUST. I took a topping recipe from Zucchini Bread IV from this site, but I modified it just a little bit for two loaves: ~ 1/2 cup packed brown sugar ~ 1/2 cup all-purpose flour ~ 2 or 3 tablespoons butter or margarine ~ 1 teaspoon cinnamon ~ 1/3 cup chopped walnuts or pecans. I microwaved the butter for just a while to make it nice and soft, mixed it together with a fork until it was cumbly, and spooned it over the loaves before putting it in the oven. This bread is SO good and easy, even for a novice baker like myself!

Awesome Roast Beef

I am a busy college student, and this recipe is super good and easy. I also threw in some onion and a clove or two of garlic. The juice can be thickened into gravy!

Graham Cracker Crust I

Salmon with Dill

This recipe is SOOO good! I have made it a few times, and what I do now is not even measure the ingredients... I just cover the salmon with the butter, and then spinkle the dill and onion powder until it's covered to my liking. Delicious and easy!

Slow-Cooked German Short Ribs

Oooooh man these are SO delicious! My boyfriend called this one, "A keeper!" About halfway through I checked on them, (the meat was already falling off the bone!) and added some garlic powder. Served with some garlic mashed potatoes and crusty bread. Will defintiely make again!!

Award Winning Peaches and Cream Pie

I made this pie for my dad's birthday. he LOVED it! I will definitely make it again, but next time I think I will try to bake the crust for about 10 to 15 minutes before I put the peaches on top.

Cha Cha's White Chicken Chili

Oh man, sooo good! I used leftovers from a roasted chicken I made last night... my boyfriend and I both loved this recipe! All the reviews about how spicy it was scared me, (my tongue is not very brave!), so I scaled it down to 1/4 tsp. of cayenne and only about 1/2 the can of jalapenos... gotta say, I could have gone a lot spicer! Next time I will use all the jalapenos, and some more cayenne. I put in about 1/4 cup more cheese, let it simmer for about 20 minutes, and served it with some cut up avocado... yum! Definitely will make again!

Easy Slow Cooker French Dip

So when I first made this recipe, I was a little disappointed... I would have given it a 3, because even though it is super easy my boyfriend and I felt it was a littl bland. However, I love French Dip so we decided to give it another go, but used a few of the suggestions from other reviewers. Before I started the slow cooker, I added fresh ground pepper, 2 cloves of minced garlic, some onion powder (probably about a 1/2 tablespoon), and a dash of Worchestershire. SO GOOD! It's totally a 5 now! We were thinking about omitting the butter, but it's a MUST on a toasted sweet roll. 7 hours is the perfect cooking time for a 4 lb. of meat; I suggest making some deep cuts in the meat like an hour before it's done. Yum!

Six Week Bran Muffins

SO GOOD. I have never liked bran muffins before, but this recipe is a keeper for SURE. I usually scale it down to 18, and it makes 12 medium-small muffins. I bake for a smidge over 19 minutes, and they turn out perfect. I like to add craisins and pecans too, so these treats end up tasting great and only have about 160/170 calories a muffin!

This recipe was great, and was even better the next day as leftovers after everything had a chance to marry. Only change was we used medium sized pre-cooked shrimp instead of salad shrimp.

Brown Sugar Meatloaf
