Whipped Pumpkin Pie

I tried this recipe for a "Friendsgiving," and everybody loved it. Instead of graham crackers, I smashed up 1 box of Vanilla wafers for the crust with the same amount of butter, but only half the sugar listed. I also added some freshly ground cinnamon and nutmeg to the crust mixture. It did take a bit longer than 10 minutes, however, to get the crust to a good, lightly-browned stage. I used prepared Cool Whip, but next time I would like to try whipping fresh cream instead. I bet this pie would taste great frozen as well, as I stuck mine in the freezer to help it set up faster. I finished up the pie with a sprinkling of fresh ground cinnamon and nutmeg on top, pretty and tasty!

Pear and Blue Cheese Salad

I made this recipe for a cook-off between a friend and I, and it was delicious! Everybody loved it and kept asking for the recipe. I had never tried walnut oil before, but it was definitely delicious in this recipe. I just used some pears that I had canned myself for the pears, giving this salad a beautiful personal touch. Blue cheese isn't my favorite, so I used feta instead, a great substitute!

Crispy Pork Cutlets

This is one of my favorites! I usually have all the ingredients on hand, and the video is so useful as well. Most of the time I end up adding more milk than listed in the ingredients list, at least half a cup more. It thickens up just as well, and there's more delicious gravy. I accidentally used teriyaki-flavored pork tenderloin, and that was surprisingly delicious and very tender. I have even made this with beef and it was good. I always use my canned pickled jalepenos, and that seems to work great.

Curried Shrimp Au Gratin

I made this recipe to bring to a casserole potluck with my extended family. It was relatively simple to make. I prepared the rice in my rice cooker, which saved on time and effort. I love shrimp and the curry sauce had good flavors. My family liked it without the heat/spice that is associated with curries, so this recipe was great for that. If I were to just make it at home, next time I might try to add some heat with some red pepper or maybe some finely chopped jalapeno.

Christmas Eve Manicotti

This recipe was not bad at all. I made it for a Christmas Eve get-together with my family, and we ate it with baby back ribs. It was not too difficult to make and my family enjoyed it. I used chopped fresh spinach, which was what I had on hand, and that was delicious, but I wasn't sure how much of it to use from just looking at the amount of frozen spinach listed in the recipe. The crepes took the longest amount of time to prepare, even though it was pretty simple to do. I added just a tablespoon or two of sugar to my crepe batter to round out the flavors. But, the crepe batter made a lot of extra crepes! I took the extras to Christmas morning breakfast with some different jams and fresh whipped cream. Also, I didn't have any wax paper, but had no problems with taking my crepes apart after stacking them up.

Tiramisu II

I love Tiramisu, but this recipe was not as good as I hoped. There was way too much filling/marscapone-egg yolk mixture for the amount of everything else, and it was very "liquidy." My family thought it was a pudding rather than a Tiramisu. The espresso and rum mixture was delicious, but, like other reviewers, I doubled it. Also, I wasn't sure why one wouldn't have sugar in the whipped cream part. I couldn't find my recipe for Tiramisu that I usually use, but I would not make this one again!

Spiced Bacon Twists

This recipe just didn't work out for me very well. My husband loves bacon, so I thought this would be a great treat for him. They were easy enough to put together and get in the oven, but it seemed like they just couldn't cook right. I didn't want to take them out until they could hold their shape, but by the time that got close to happening, they were mostly burnt. They weren't terrible, but they didn't live up to the other reviews I had read. I might just have to head up to that Inn in Atchison to taste their version.

Nutty Coconut Fish

I used sole filets, and it was super delicious! I used chopped peanuts instead of mixed nuts, and all I had was the sweetened coconut, and I used dijon mustard, and they turned out extremely delicious! Will definitely make again, though it did have a bit too many points for my weight watchers than I would have liked, 11 per serving.

Asian Lettuce Wraps

Very delicious! I loved the contrasting textures and temperatures of the lettuce wrap and the meat/veggie mix. I added minced canned straw mushrooms, which were delicious in this recipe, while also adding a meaty texture to make it seem like you have double the meat. The sauce was delicious. I used regular minced ginger because I couldn't find any pickled ginger, though I do love pickled ginger. I didn't bother to buy Asian chili sauce, but I had some regular chili sauce and some leftover spring roll dipping sauce on hand that I added in. I would definitely make this again, even though it was a little bit messy at times.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Pretty delicious! I made them at my mom's for dessert tonight, and even a couple picky teenagers ate them! I was planning on changing some stuff, using my own chocolate chip cookie recipe and a yellow cake batter from scratch, but I ended up not having the time, so preparing these as is worked just fine! I baked them for 16 minutes from the poster's recommendations, and they were absolutely perfect. Gooey chocolate chip cookie dough inside, delicious cupcake outside. I did press down the dough balls a bit, and dolloped some batter right on top of each ball. When done, they looked just like the picture, I was impressed! Thanks!

Sweet, Sticky and Spicy Chicken

Very delicious! I dusted my chicken strips lightly with flour like several other reviewers, and I seasoned it with salt, pepper, and some chili powder. I browned it, then I added some sliced onion, frozen sliced bell peppers, and frozen french green beans. I let the water from the frozen items cook out some, then I added the sauce and let simmer for eight minutes. One more tweak in the sauce, I used finely chopped fresh ginger from a tube, Gourmet Garden brand, I love that stuff! It keeps so much longer in the fridge than fresh items! Anyway, the chicken was sweet, sticky, and spicy, and was great served over white rice!

Whoopie Pies II

These are absolutely delicious! The cakes made up better than I was expecting, they were pretty well perfect. It was unclear how large the drops needed to be on the cookie sheet and how far apart they needed to be, I did about a tablespoon-size and a couple inches apart, which worked out perfect. I had my oven at 340 Fahrenheit convect, and they were done in about 9 minutes. I let them cool on the cookie sheet about 5 minutes, and transferred to cookie rack. The filling however, did not work for me at all! I didn't have enough shortening, so I substituted butter instead, and the filling emulsified and melted butter got everywhere. But, it was still extremely delicious. The recipe made a whopping 32 whoopie pies, way more than I was expecting! Next time I will probably either make just a meringue for the filling, or whipped cream. But, very tasty!

Apple Squares

These bars weren't bad, I had a hard time mixing the batter together though, it seemed like it was too dry to stir! Also, it is hard to get them cooked just right, the bars in the middle seem like they aren't done all the way through! I had to add at least double the apple, and it was unclear as to whether the apples should be sliced or diced or what. I ended up dicing the apple, and I used two eggs to try to make the batter easier to stir together. But taste-wise they are pretty good.

Peaches 'N Cream Pie

Love this! So delicious, so easy to make, doesn't make a huge mess. I've used fresh or canned peaches, both turn out great! Definitely a unique pie, I will be keeping these ingredients on hand to be able to make it whenever!

Buttermilk Pancakes II

These pancakes are delicous! I was expecting them to be a bit bigger and fluffier, but they were delicious and worth five stars all the same! I usually just use a pancake box mix for big breakfasts, but this was well-worth trying. I cooked up some bacon, sliced it into 1-inch pieces, coated the pieces and some cheddar cheese with flour, and mixed into this pancake batter. Makes very delicious bacon-cheddar pancakes! But I also made some plain and some with chocolate chip, all super delicious! It made a ton of pancakes, way more than the recipe says, but that was definitely okay with my husband and I, they were so good! Update: I made these pancakes again for my mom-in-law, and they were huge and fluffy, as promised! My baking powder must have been too old before. Super delicious, give them a try!
