Spinach Chickpea Curry

Excellent. Quick, easy and flavorful. (I skipped the tofu.) My boyfriend from India made the following modifications for more authenticity: After heating oil in pan, add 1/2 t. cumin seeds. Heat for 30 seconds, stirring. Then add 6 curry leaves and 2 t. ginger-garlic paste. Stir for 30 seconds. Then add onion, 1 t. garam masala, 1 t. chili powder and 1 T. curry powder. (no curry paste required) I followed the recipe similary except that I added about 1/2 cup water after putting in the chick peas to create a thinner consistancy. We both loved it served with basmati rice. Next time I may add some chopped tomato.

Egg and Pesto Sushi

Amazing! I had a sushi party and I decided to print out some sushi recipes for my guests to try. This one was an absolute HIT. I wasn't sure how the combination of pesto and egg would taste, but it is a delicious combination in sushi, adding an Italian twist! I also added avocado slivers. I will certainly make this in the future! Outstanding!

Curried Hummus

Excellent! I love this recipe. Very simple and easy. The curry adds a wonderful flavor and color. Highly recommended for entertaining or for a lunch or appetizer for the family.

Mango Cashew Salad

An absolute hit -- great mix of fruity and crunchy. I used one tablespoon of orange champagne vinegar and one tablespoon of sugar water (2 t. sugar melted in 1 T. water). I served it at a party and everyone loved it. Love the combination of sweet mango with sour apple.

Cucumber and Avocado Sushi

A great recipe! I added crab sticks to a few, and also smoked salmon. The smoked salmon was a delicious addition! Definitely need some dipping sauce such as soy sauce or wasabi to add flavor if just using cucumber and avocado.

Beets with Onion and Cumin

Absolutely delicious. I will definitely add this to my list of favorite recipes. My boyfriend and I loved it! We served it with basmati rice which soaked up the flavorful sauce. Next time I will cut the beets into smaller, bite sized pieces.

Smoked Salmon Sushi Roll

Garbanzo Bean Salad

Wow -- This was delicious and I will definitely make it again. I increased the serving size to 12 and although it called for 3 apples, I just included 2. I love the combination of textures. I added some grill seasoning for added flavor. Next time I may add in some toasted sesame seeds or even cilantro. Highly recommended -- I received lots of compliments and recipe requests when I served this at my party.

Orange Curried Chicken

There definitely wasn't enough flavor in this dish. I thought the orange marmelade and curry sounded like a great combination, but I was very dissapointed. I won't be making this again. I plan to pull the chicken and make it into a soup instead.

Caramel Apple Pie I

The pie turned out wonderfully! Here are the modifications I made: I squeezed half a lime over the peeled apples to keep them from browning. As suggested by another member, I used caramel dip instead of caramel topping and spread it on the bottom of the pie crust. I used 2/3 cup sugar instead of ¾ cup. I used ¾ t. all-spice instead of cinnamon. I used walnuts instead of pecans. I added ½ t. cardamom powder. About half way through baking, I put foil over the top because it was rapidly browning. Fifteen minutes before it was done, I removed foil and just placed it on the crust. A delicious pie that I'll definitely make again!!

Debdoozie's Blue Ribbon Chili

Delicious! I was skeptical of making this chili because of the few ingredients - it sounded too easy to be tasty. But I was pleasantly surprised. Here are some modifications I made: Used ground chicken instead of beef, used fresh chopped garlic and sprinkling of salt instead of garlic salt, added 1 t.coriander, 1/8 t. chili powder, 1/2 t. cumin and 1/4 t. red pepper flakes, added 1/4 chopped green pepper, used entire envelope of chili seasoning. I am so excited to have found this recipe and plan to make it on chilly winter nights in the future.

I wasted wine and champagne to make this. I was really excited and eager to make this recipe because it sounded so good. But I was extremely dissappointed when I sampled some. Try a different recipe!!!!

Curried Corn Fritters

I was hoping to find a recipe similar to my mom's fritters, however I liked the idea of adding curry for something different. After mixing in the egg, soy milk, and salt, I had a thick goopy mess, similar to biscuit mix. I have no idea how you could get a "thin consistency" unless you add at least twice as much liquid. I added an extra half cup of milk. When I added the corn, I also added the corn liquid. I still could not get a good consistancy. The fritters were flavorless and I couldn't taste any curry --- just salt and flour. Sorry but I'll never be making these again.

Bean Quesadillas

Easy and fun to make. I used the smaller 6" tortillas. I placed the tortilla in my pan, added toppings to one side, and folded the tortilla in half. This is much easier than the traditional method and less messy. This recipe is not spicy at all, so if you like some heat, add hot peppers or dip into spicy salsa. I'll definitely make these again!

Apple, Brie, and Walnut Salad

I thought the brie in this was way overpowering. A different cheese selection may be ok. I purchased an "Emeril's" bottle of balsamic vinaigrette which was great. Surprisingly, I found that this salad actually tasted better the next day... I think over time, the vinaigrette mellowed out the cheese. Served the second day with grilled shrimp and veggies on top, it actually wasn't too bad.

Fantastic Black Bean Chili

This chili was ok. Not my favorite recipe. I added 1 cup of chicken broth because otherwise it would have been way too thick. I also added 1 bay leaf, 1 1/2 teaspoons cumin powder, and one dried red chili to add more flavor.

A beautiful, colorful presentation for gift-giving. Easy to make and you don't have to "force" the ingredients to fit into the jar. The cookies that I baked turned out perfectly and I'm not usually very good at baking. A great recipe!

Vegetarian Bean Curry

Wonderful recipe. I made a few modifications: After heating oil in pan, I added 1/3 teaspoon black mustard seeds, 1/2 teaspoon cumin seeds, 5 curry leaves. Saute 30 seconds. Then add onions, and continue recipe. I deleted powdered cumin from the recipe and added 1 teaspoon of all spice instead. I added some water at the end and bumped heat up to medium to fully cook lentils.

Spicy Black Bean Cakes

These came out dry and pasty. I followed the recipe exactly and expected them to brown during broiling, however they didn't. If I make these again, I would fry them in a skillet with a generous amount of oil.
