This is a great base recipe. The changes I made was to poach my chicken (bone in, skin on) in water with carrot, celery, peppercorns and bay leaves. Then when it was done poaching, cube it up and add to the veggie mixture right before pouring in the pie dish. From there, I sautéed the carrot, celery, onion for about 5 minutes on medium. Then add garlic and finish cooking veg till soft but with a bite left (I don't like mushy veggies). Sprinkle in 1/4c. flour (not 1/3c) and stired to combined. Then whisked in broth that I poached chicken in and the milk. Added 2 tsp. salt, poultry seasoning to taste and pepper. Once mixture had thickened I added the cube chicken and poured into the pie crust (as mentioned above) and topped with another crust. Brushed with some milk and popped into a 375 degree oven for 45 min.
