Traditional Style Vegan Shepherd's Pie

Delicious Comfort Food! After 8 years of marriage my husband finally converted to vegetarianism and asked to have this instead of turkey at Thanksgiving - delicious!! I changed the recipe to use what I had on hand and did use real dairy but it still turned out fabulously! Absolutely 5 stars!

Unsloppy Joes

3 stars for being edible and something new, but not one of our favorites. We are vegetarians, but like to try vegan dishes; however, when I got to the last step, I had to add fake meat crumblers trying to give it some substance. Doing this made it too dry, so a word to the wise, if you are adding fake beef, add more than one can of tomatoes. I also used just 2 tsp's of chili powder based on other reviews and the spiciness was not overpowering. Vegan, yes... delicious, not quite.

Veggie Pot Pie

This recipe is great because of it's versatility. I should have used what I had on hand (peas instead of green beans and broccoli instead of cauliflower). As other reviews said, it is soupy but if you let it cool after baking, a lot of it is absorbed and that extra broth is needed. One thing that a novice like myself wont know is to bring it to a boil after adding the starch mixture to help it thicken. Luckily my hubby directed me to do this. I also used chicken broth just to get the real pot pie flavor. My carnivore husband said it's the best pot pie he's ever tasted. Great recipe!

Mom's Best Macaroni Salad

As a vegetarian I am forced to be a connoisseur of side dishes and this one rocks! It tastes like it's from a great deli. Based on other reviews I didn't add any sugar and it was perfectly sweet and delicious. I was scared how it would turn out because I ran out of real mayo so used miracle whip instead. I think it may have turned out even better because of the tangy-ness of miracle whip. LOVE IT!! I will definitely make this for our next pitch-in or bbq instead of buying it.

Baked Ziti

I had to give this 5 stars because my picky-eater kids loved it! I didn't have Ricotta so I used cottage cheese instead and just 1 egg. I also used fake meat (vegetarian) and homemade Italian tomato sauce Since I didn't have the extra juice from real meat, I only cooked it for 30 minutes total. I did the math and including Italian bread and sauce from scratch it cost $12.96 and we have lots of leftovers for lunch tomorrow. So much better than the $65 we pay at our favorite Italian restaurant. Great recipe, will definitely make this for years to come. Thanks!!

Stuffed Peppers My Way

Delicious! Being vegetarian never tasted so good! I did as other reviewers suggested and lightly brushed with oil before roasting; only needed 20 min. Also added mushroom, corn for color, veggie meat crumblers (will do beans next time) and a couple tablespoons of homemade tomato sauce just because it became too dry with all the extras I added. I think regular onion would work if you didn't have green and a lot of different cheeses could be used too. I doubled the recipe but will halve the salt next time. I also think any pepper would work, not just green. Great versatile recipe - thanks!!

Seven Layer Dip II

Best dip ever! I don't like sour cream or olives but this was delicious as written. I made it with Wholly Guacamole just because avocados in the mid west are expensive - turned out so good I almost just ate it with a spoon. Will definitely make again and again - thanks!

Vegetarian Meatloaf with Vegetables

I've been vegetarian for 16 years so I don't really remember how meatloaf tastes, but this is a great tasting recipe that my husband who just recently became vegetarian said does indeed taste like meatloaf. The only issue is it does fall apart and I'm not sure how to correct that problem. I followed the directions exactly except used the 1/2 c ketchup, 2 tsp mustard and 4tbs brown sugar topping instead of tomato sauce. I found that the extra salt called for in the recipe makes it a bit too salty. Both my kids liked it so it gets 5 stars from me, but I would've given it a 4 for taste and texture. I also used mashed potatoes and steamed carrots to save cooking time so it ended up only needing 30 min. total. Overall, good winter time recipe, very savory.

Vegetarian Korma

Using other reviewers advice I pre-cooked the potatoes and carrots. Next time I will steam all the veggies ahead of time as they remained failry crisp. I also added cauliflower and broccoli so I needed more tomato sauce mixture which meant I also needed more spice than what's called for. I was hesitant to use all coconut milk thinking I might miss the creaminess so I used 1/2 c coconut milk and 1/2 c. half and half. Next time I will definitely use all coconut milk. Also added cayenne pepper as we like it spicy. It turned out nice and wet so it went well with basmati rice. Didn't have naan so I heated butter and garlic in a pan and cooked pita until crispy and hot. Was delicious! Definitely a keeper!

Baked Falafel

I had an awful falafel at a high end restaurant last weekend and thought to myself "allrecipes.com can do better than this" and sure enough, this recipe pulled it off. I found like other reviewers that they did fall apart but that was remedied by making a more fine chop in the processor instead of a coarse chop. I followed the directions to a T but doubled it and stuffed it inside pita pockets with red onion, spinach, cucumbers, tomatoes and tzatziki for a vegetarian gyro. I also misted the patties with olive oil before baking so they didn't dry out at all. My recipe for tzatziki: seed and grate 1/2 q cucumber and blot with paper towel, dust with coarse salt and let sit for 10 min. Combine 1tbsp minced garlic, 1 1/2 c greek yogurt, 1 tsp fresh mint, 1/2tsp dill, 1-2tbsp olive oil and half a squeezed lemon. Add cucumber and refrigerate for several hours for flavors to full merry. I think this was by far the best falafel I've ever had. Thanks so much for the recipe! Awesome!

Sausage Hash

This was quite delicious but I did make changes including leaving out carrots but adding mushrooms and about 6 eggs and garlic. I used Smart Ground fake breakfast sausage and it worked out perfectly. I thought it was missing something but hubby went back for seconds, so I guess not to him. I wish I would've fried the potatoes to make them crispy first as other reviews said but overall pretty good. I will make it again with changes noted.

Cheesy Sausage Zucchini Casserole

Do not hesitate to turn this into a healthy dish. I used a box of Morning Star vegetarian sausage patties, whole wheat rotini instead of rice and fat free shredded cheddar cheese instead of cheese goo. It turned out fabulous. I also used fresh mushrooms, one fresh tomato and one can diced (to keep enough liquid) and added garlic, lots of oregano, minimal salt cause the sausage has it. Only cooked it for about 10 minutes since everything was already cooked. Just needed to melt the cheese on top. You could even go vegan and make this with soy patties and no cheese or vegan cheese. It was so versatile, filling and delicious - a definite keeper for the rotation.

Mock Tuna Salad

Followed the recipe exactly and this is delicious! I've been vegetarian for 15 years so I think this tastes like tuna salad. My husband just converted a year ago and says it doesn't taste like tuna but we both agree this recipe is fantastic on toast or saltines. Nice job - thanks for sharing!

Penne with Spicy Vodka Tomato Cream Sauce

What's really nice for me about this recipe is that you can substitute real sausage for Morning Star vegetarian sausage. I halved the recipe and still used a bit less oil and red pepper than suggested but the whole can of tomatoes. Don't worry about the cream curdling, it does fine. Tasted great but I can see using half and half instead of heavy cream to make it healthier. Whole wheat pasta would probably work too. Thanks for the recipe!

Vegan Mexican Stew

I love the spice in this dish but I think I would probably call it a soup rather than stew. Maybe I just added too much broth? I added light red kidney beans instead of hominy (never used it) but next time I will add corn too. I served it with crusty bread but it would've been better served with cornbread. Overall, delicious and flexible dish - thanks!

Veggie Lasagna Rolls

Excellent twist on a classic dish. Next time I will use zucchini instead of broccoli. I also used whole wheat noodles in an attempt at making it more healthy which worked well. I ended up way too much veggie mixture for the allotted space in the pan, so I used the noodles that broke to make second smaller casserole with sauce, noddles, veggie mixture, more noodles and sauce on top. It was nice because now I have dinner for another night this week already prepared. Was really good with Italian bread and I will add a side salad next time too. The only down side was rolling the mixture into the noodles and transferring it to the pan - messy! Tasted great though. Thanks for the recipe!

Meatless Loaf

I wish there was 1/2 stars so I could give it 4.5. The only reason it's not a 5 is because it fell apart and I made slight changes. Like the other fantastic reviewers noted, the soup mix would've been too much so I used half a packet. Also used 2 pckgs Smart Ground from the fridge section instead of frozen. I've tried both and neither hold together. Also used sunflower oil instead of veg and added sauteed onion, garlic and grn. pepper instead of powder. Glazed with 3/4 c ketchup, 1tbsp mustard, 1 tsp worsh. sauce, 2tbsp brown sugar. I served on a bed of mashed red potatoes (5 potatoes boiled and mashed, 1/2c mayo, 1/2 c milk, 1 tbsp olive oil and 1 tsp salt) and a side of steamed carrots. Very hearty meal, will definitely make again. I'd love suggestions on how to make it hold together better.

As a vegetarian I'm always looking for a versatile ground beef casserole as it's easily substituted with frozen vegetarian crumblers. I'll make this again but the following changes: I found the cheese unnecessary so I'll omit that. I didn't use crm of chicken as it has chicken bits so I used only crm of mushroom. I will double that next time and add milk. For some reason the tomatoes felt out of place. Next time I'll use something that absorbs the flavor of other ingredients like zucchini and mushroom instead of overpowering tomato flavor. And also keep the no yolks pasta so it's a little healthier. Great base recipe for this veg head!
