Quinoa and Black Beans

I have made this recipe half dozen times now, and it always turns out great! Use 1 can of black beans and double the cumin and cayenne pepper - the spices and flavor are perfect. This tastes good cold or hot, tastes even better a few days after it's made, and freezes well. It's one of my go to healthy weeknight recipes.

Guacamole

Good, but any great guac recipe should have fresh diced jalapeno and cumin (1 tsp), so have to take a star off for that. If you add these 2 ingredients, it's a 5 star guac.

Mexican Rice III

This was so simple to make and came out delicious! Agree with the other reviewers about adding the veggies and spices first, saute, and then add the broth and cover. Yum! Will make again and again - my fiance also loved it.

Master Pizza Dough

Yum! Wanted to throw in another great review for this pizza crust - it's easy and delicious, and I live in the NYC, the pizza capital of the world! Came out perfectly just as written. Surprised more people have given this tip thought - I pre-baked the crust for 10 minutes, and then put the toppings and cheese on before popping it into the oven for another 10 minutes - this way, the crust was nice and crisp, but the cheese was perfectly melted (not burned). Other than that, the instructions are precise, and the taste is amazing!

Easy Morning Glory Muffins

These muffins are great IF you are looking for a really healthy-tasting muffin (as in, you are NOT looking for something sweet with a streusel topping like you would get at a bakery). Tastes like a little like a bran muffin...

Sour Cream Coffee Cake

The batter was so thick I had to add another egg to make it more moist and easier to spread in the pan. Agree with others that a smaller baking dish (I used a 9 x 6) is better. Took 55 min to cook with the smaller dish. I also added 1 Tbl cinnamon and 2 teas. nutmeg to the batter, and cut in cold butter to the topping to make it more of a streusel. Overall, turned out great, but only 3-4 stars as written.

Homemade Black Bean Veggie Burgers

Added 3x the amount of breadcrumbs to get it to hold together. Decreased the amount of cumin and chili powder by a teaspoon, because of all the reviews, but should have left the recipe as is! Added fresh cilantro and 1/2 a minced jalapeno, and the patties were STILL a bit bland. Will make again, but with MORE not less spices. Comparable to store bought black bean burgers, but not better.

Greek Pasta Salad

I used balsamic vinegar instead of red wine (had on hand), so it maybe it's not fair to rate. This was a pretty good pasta salad, but a little bland for our tastes (we like very flavorful food). Could not really taste the garlic, oregano, etc. very much. The amount of dressing is about right for the pasta though. Maybe I'll make again with the red wine vinegar and more spices...

Apple Strudel Muffins

Good consistency, but not as flavorful as other muffin recipes I've tried from this site. Actually added A LOT of spices - 2 teaspoons cinnamon, 1 teaspoon nutmeg, and 1.5 teaspoons vanilla extract to the batter, and all 3 spices in the topping as well. Disagree with other reviewers saying to double the apples - 2 large apples is plenty to get apple chunks in every muffin. I substituted 1/4 cup butter with 1/4 cup apple sauce instead, which turned out great- did not affect the consistency / moistness at all. So try the last tip as an easy way to cut some calories!

Cracked Sugar Cookies I

These are PERFECT. Not sure how anyone could go wrong with these. One piece of advice - follow the recipe... do not cheap out on the cream of tartar. Do not use whole eggs instead of just the yolks. Do not bake them longer than suggested if you want a soft cookie. Only change was I added nutmeg and cinnamon to these, and doubled the vanilla, and they are melt in your mouth good!!

Grandmother's Buttermilk Cornbread

Good in terms of texture, but it was quite bland and a teeny bit dry. Followed recipe exactly, including the buttermilk and stated amount of butter. Next time, would add jalepenos or maybe some cayenne pepper to give it a kick. Update - made this recipe again tonight with the following changes: - Decrease sugar to 1/3 cup - Use 1 and 1/3 cup cornmeal and 2/3 cup flour - Throw in 3 diced jalapenos This made it taste more like cornbread (and less like cake), and the peppers added a nice kick to balance the sugar. 5 star recipe with the changes!

Banana Crumb Muffins

Great, but a little bit dry (I followed the instructions exactly). Also, not enough banana flavor for me, but the bananas I used could have been more ripe- will wait till I have ones that are almost turning brown before I make again - hopefully it will give it more moisture and banana flavor.

Grandma Johnson's Scones

The other reviews say it all - these scones are amazing! I was really nervous when I saw the batter- extremely sticky and hard to handle. Got even more nervous when I had to coat with a lot of flour while kneading to get it to hold it's shape and not stick. BUT, after I finally got it cut into wedges and started baking, they turned out magnificantly! I added cranberries instead of raisins, also a little vanilla and cinnamon (1 tsp each). Will probably add even more next time for more flavor, but they still had perfect density, fluffiness, shape, and texture- just like a bakery!

Chocolate Mint Cookies I

These are truly delicious! My boyfriend and I are foodies, so very discriminating when it comes to recipes ;). These cookies are moist, soft, and have just the right amount of mint - not too strong but you get a nice flavor with every cookie. Plus they are super easy to make, and the melting of the mints on top is a no-fail icing system. Big thumbs up!

Basil Tomato Soup

Usually the reviews are spot-on on this site, but I'm surprised this recipe got such rave reviews. I made it exactly as specified and ended up with a bland, chunky, watery mess of a soup. I was able to save it with SIGNIFICANT alterations: doubled the basil, added oregano, red pepper flakes, lots of salt and pepper, and 1/2 cup freshly grated sharp cheddar cheese. Also, it is crucial that you put this sauce in a food processor / blender to get the right consistency of a smooth, creamy soup. The above gave it a lot more flavor, a thicker consistency, and the blender step is crucial for if you don't want chunks of tomato and pieces of basil leaves in the soup. Blending it evens out the flavor and texture. Turned out great- but people should know that this is just a base recipe- you have to do a lot to get it to be a great soup.
