Ten Minute Enchilada Sauce

I AM SHOCKED - I never thought I could have restaurant quality enchilada sauce at home! It was OUTSTANDING! I followed some of the other reviewers' suggestions and substituted chicken broth in lieu of water and I added a couple of squares of dark chocolate (about 1/4 of a regular Dove candy bar). Also, I have Celiac, so I used Gluten Free flour and it turned out great!

Jalapeno Cream Cheese Chicken Enchiladas

Very tasty recipe! My family loved it! I skipped the first couple of steps and used ground chicken instead; sautéed the vegetables & then cooked the chicken with them. I found the cream cheese & chicken filling to be cheesy enough, so I didn't add shredded cheese inside the enchiladas - just sprinkled on top. And I used a homemade red sauce which was really good. Best of all, this was easy to make ahead so I doubled the recipe and put half in the freezer for a quick & easy meal on a busy night.

Slow Cooker Au Jus Pot Roast

I have to admit, I had my doubts with the coffee and tomato sauce. I was wrong - it was fantastic!! I followed the recipe and the only change was that I added in a couple of sliced shallots. The au jus was so good.. and the leftovers the next day were even better! This will be the go to recipe every time I make pot roast.

Broccoli Cheese Soup

I followed this recipe and made two changes: I only added one cup of milk (not two), and added black pepper. It was DELICIOUS! My family loved it and my husband said it was the best broccoli cheese soup he's ever had. I will definitely make this again.

Chicken In Basil Cream

Fantastic! Instead of pimento peppers, I stirred in some minced onion and garlic while deglazing the pan with the chicken broth. Also, had a bottle of white wine open so I poured in a couple of tablespoons after the cream. Got many rave reviews from the family! Will definitely make this again!
