Italian Torte

I have made this but add chopped black olives and chopped pistachios....it is one of those things you bring to a party that people always ask you for the recipe! Be sure the provolone cheese is not sliced thick...makes it difficult to serve.

Pasta Fagioli

This was fabulous.....not a big pasta fajole fan, but my son had to make a batch for his Italian class....it was molto bene!! I used ditalini for the pasta and was a little heavy on the red pepper....so mine was a little spicy, but oh so yummy!

Chicken and Red Bean Enchiladas

This was really good and even my picky kids loved it. I think next time I would increase the amount of chicken and slightly reduce the amount of sauce as there was quite a bit left over...other than that, this was a great way to use up leftover chicken.

Sweet Pepper Rice

This recipe was easy and very tasty. My picky family even liked it...hence the 5 star rating. I doubled the recipe and used yellow instead of green peppers and the result was great. I agree with another reviewer that I would add a little more broth next time when doubling the recipe as it absorbed the liquid rather quickly.

Italian Easter Cookies

Not only are these cookies tasty but they are relatively simply to make. They aren't terribly sweet unless you add the icing. I made only a half batch of the icing since I thought the cookies tasted great without, iced about 2/3 of them and still had a ton of icing left over. Also, I didn't have almond extract so I doubled up on the vanilla in the cookies and they were still great. Just don't overbake them..it ruins the consistancy of the cookie.

Linguine with Clam Sauce

This recipe was quick, easy and delicious. I took another reviewer's advice and used 1/4 cup olive oil and 2 tbls butter instead of the listed oil and butter and added a splash of white wine to give it another layer of flavor but overall it was yummy. My kids even liked it!

One Bowl Chocolate Cake III

The best and easiest chocolate cake ever...once you've tasted it, you'll never eat chocolate cake from a boxed mix again! The best part is that it is simple to make and very, very moist.

Bread Pudding II

For someone who never liked bread pudding I must say, this recipe has changed my tune. It is so easy and so good...Serve with whipped cream. I only used 3 eggs at other reviewers suggestion and it was perfection.

Best Toffee Ever - Super Easy

This is a wonderful treat! I bring to dinner parties instead of cakes/pastries and I'm always asked for the recipe. It is extremely yummy and easy. I would strongly suggest to let the mixture get just a little darker than what you think is dark amber if you are not using a candy thermometer.

This cookie is always part of my Christmas cookie repertoire...they are excellent! I like to use the Ghiradelli white chocolate cooking bar coursely chopped instead of chips.
