Italian Torte

I have made this but add chopped black olives and chopped pistachios....it is one of those things you bring to a party that people always ask you for the recipe! Be sure the provolone cheese is not sliced thick...makes it difficult to serve.

Chicken Cacciatore

I thought this was good, but not your traditional chicken cacciatore. I would prefer to call this a sweet and sour chicken since that is what it really tasted like. I found the vinegar to be a little overpowering (and I love balsamic) so I added a touch more brown sugar to offset it.

Linguine with Clam Sauce

This recipe was quick, easy and delicious. I took another reviewer's advice and used 1/4 cup olive oil and 2 tbls butter instead of the listed oil and butter and added a splash of white wine to give it another layer of flavor but overall it was yummy. My kids even liked it!

Pecan Pie III

The only thing that made me rate this a 4 star and not a 5 was that it was runny in the middle when I first cut into it. It definitely was delicious, and once my family got past the runny stuff in the middle they raved about it.

Pasta Fagioli

This was fabulous.....not a big pasta fajole fan, but my son had to make a batch for his Italian class....it was molto bene!! I used ditalini for the pasta and was a little heavy on the red pepper....so mine was a little spicy, but oh so yummy!

Italian Easter Cookies

Not only are these cookies tasty but they are relatively simply to make. They aren't terribly sweet unless you add the icing. I made only a half batch of the icing since I thought the cookies tasted great without, iced about 2/3 of them and still had a ton of icing left over. Also, I didn't have almond extract so I doubled up on the vanilla in the cookies and they were still great. Just don't overbake them..it ruins the consistancy of the cookie.

Anna's Amazing Easy Pleasy Meatballs over Buttered Noodles

I made this my own way and it was delish. First I cut the ingredients in half since I was making it for 5 people. I used my own turkey meatballs that I baked and did not use a slow cooker...just made the sauce and let the cooked meatballs sit in it for 10 minutes simmering....then threw everything over buttered noodles....very tasty and simple.

Chicken and Red Bean Enchiladas

This was really good and even my picky kids loved it. I think next time I would increase the amount of chicken and slightly reduce the amount of sauce as there was quite a bit left over...other than that, this was a great way to use up leftover chicken.

Sweet Pepper Rice

This recipe was easy and very tasty. My picky family even liked it...hence the 5 star rating. I doubled the recipe and used yellow instead of green peppers and the result was great. I agree with another reviewer that I would add a little more broth next time when doubling the recipe as it absorbed the liquid rather quickly.
