About this Cook
My favorite things to cook
I love to cook poultry in different ways. Chicken and turkey are so easy to prepare in ways that appear to be elaborate but are usually quite simple.Pasta sauces are a favorite of mine,as well.
My favorite family cooking traditions
My heritage is Italian and Polish, but we grew up mostly on Italian cooking, so recreating my Grandpa's Italian sausage was a tradition for many years. We are reviving next Christmas so the grandchildren will be able to taste this simple, delicious family holiday staple.
My cooking triumphs
The first time I brined a turkey, it came out juicy and delicious. It was 20 pounds and not easy to handle, but everyone loved it. It made wonderful soup, as well.

Breakfast Sausage Casserole
I used Turkey Italian sausage an O'Brien potatoes, cooking the potatoes with the the sausage before mixing it with the other ingredients. Using other suggestions, I baked it for 50 minutes. This was a hit with my family. We're making this for the holidays for sure.

Pumpkin Black Bean Soup
This is a great recipe on its own, but I did take the advice of those who used apple cider vinegar rather than sherry vinegar and it was a hit. I also added cumin, which I always think adds a good flavor to black bean soups. The pumpkin gives the soups a nice sweetness, as well. Since there are only two of us, the rest of the soup is ready for the freezer for more meals!

Basic Chicken Stock
This sounds exactly like my own chicken stock recipe except for the cloves. I use whole allspice. In addition, I add garlic cloves or dried minced garlic for extra flavor and cook it longer to make a nice rich stock.
