Black Bean and Corn Quesadillas

Used fresh corn and cooked with the onions. Also skipped the pepper flakes as I used a hot salsa. Delicious! Used cooking spray for tortillas, didn't miss the butter. A keeper!

Penne with Ham, Mushrooms and Peas

I thought this was a good base recipe. I cooked the peas with the pasta then added both to the sauce mixture. Used Parmesan cheese and half and half and still got a nice, creamy consistent sauce.

Easy Mexican Casserole

This is delicious ! I'm just at 4 stars because I had a little curdling with the sour cream that didn't look appetizing but the flavor was delicious. Followed the advice of others and added some spices to the meat, used a medium hot salsa, which was a good move. Also didn't crush the chips but laid them across the bottom of the dish instead. I drained a can do diced tomatoes and used those, that may have been my curdling problem source. I will

Asian Glazed Chicken Thighs

DELICIOUS!! This is a winner and a keeper! I followed the recipe in step with two exceptions: I didn't add salt to the marinade, I used full-salt soy sauce; also for the glaze, I added about a quarter-cup of mirin before cooking it. I think the mirin gave it just the right amount of sweetness to balance it out. This is my kind of spicy, too! Not too hot but a heat that kind of builds. I served it with steamed jasmine rice and steamed broccoli. I look forward to making this again! I want to try grilling the chicken for it sometime too.

Chicken Tikka Masala

DELICIOUS! I followed the recipe to the letter except for using half-n-half (what I had on hand). I broiled the chicken as it's in the 20s outside tonight. Just love it! Reminds me of tikka masala I've had in Indian restaurants. I was surprised by the amount of salt, but the dish did not taste too salty. That said, I think I'd cut a teaspoon of salt out of the marinade next time. And there will be a next time!

Three Bean Salad

Made this for a Labor Day picnic, and it's very good with less sugar. I used a half cup, and I'd likely use a third cup the next time I make it. I'm just not a sugary girl! Also used red wine vinegar as another review suggested, that was a good idea! Nice kick. Will make this again for sure. Be sure to make it the day before you use it, those flavors really come out after overnight in the fridge.

Unbelievable Fish Batter

Fantastic! I followed the recipe as-is except used half and half because I was out of milk. So crispy and light! Like a previous reviewer,I had a problem with the fish sticking to the bottom of the pan, which I blame on the oil not being deep enough. So I know better for next time, and there WILL be a next time!

This was delicious! I used fresh spinach instead of frozen and followed the advice of other reviewers and put the oven at 325 degrees. Chicken was done in half an hour.

Mediterranean Stuffed Swordfish

This recipe just didn't work for me. The spinach and feta are great flavors to the swordfish, but the stuffing part didn't work. I baked it and it didn't seem to bake evenly. I ate the bottom part with the stuffing, and that was tasty, so if I do this recipe again, I'll do the swordfish separate and finish off with the spinach-feta topping in the last few minutes of cooking.

Grilled Turkey Reuben Sandwiches

DEE-LISH!!! I had the good fortune of finding homemade sauerkraut at a local farmers market, this was the perfect sandwich for it. I was tempted to make myself another! I used peppered turkey, Smith & Wolensky's thousand island dressing (lower in fat and calories but great taste) and Gruyere cheese, I didn't have Swiss. Also used a Hungry Girl whole-wheat flat bread and when I cooked it, I put a heavier fry pan on top to weigh it down a bit. So tasty! A definite keeper

Spaghetti With Red Clam Sauce

I think this is a good recipe to build upon. I agree with some other reviews that it's runny but that's easily solved with some toasty garlic bread. Next time I'll double the capers and spices. I used two 10 oz. cans of whole baby clams, partially drained. It goes well over whole wheat pasta

Thai Chicken Curry in Coconut Milk

Delish! I'm giving it 4 stars because I did some tweaks to it after reading other reviews. I used a generous tablespoon of red curry paste and believe that was enough. Also followed the advice of others and seared the chicken separately before adding it to the pot for the last 5 mins. That gave me nice moist chicken. Recommend adding a green bell pepper cut into strips also, gives it more color. I served over steamed jasmine rice. Really like this, will make it again for sure!

Spinach Almond Pesto

Delicious! Had a large bag of fresh spinach to use before it went bad, gave this pesto lovely body. I didn't have lemon juice so I skipped it. Will make this a go-to recipe for sure. I used it with whole wheat spiral pasta

Arroz Con Pollo Mexicano

Tasty! I happened to all but one of the ingredients on hand, this is a great dish for a cold football night. I didn't have tomato sauce so I substituted most of a can of tomato paste, which I think gave it good flavor. I also used two packets of that Swanson Flavor Booster. I'd definitely would make this again.

Mint Pesto Pasta

This was really good and easy. I didn't have fresh tomatoes on hand, so I used a 28 oz can of diced tomatoes, rinsed and drained. I also used whole wheat linquini, this recipe worked well with it.

Baked Trout Saratoga

DELICIOUS!!! I can't say enough about how much I enjoyed this dish. I followed the recipe exactly and it came wonderfully. The fish was cooked perfectly, and even the next day the leftovers heated well and were still tasty. So glad to have a fast recipe for trout now that it's trout season and I have a freezer full of it!
