I'm not a huge pasta fan, but I made this when I was in a pinch and it came out pretty good. I didn't have provolone cheese, so I just used extra Parmesan cheese in it's place.

Oven-Fried Pork Chops

I cooked this exactly how the directions said to and it was FANTASTIC! I used the boneless pork chops from Costco and cut them in half to make them a bit thinner. The cooking time suggested was perfect; they came out juicy! My hubby loved it! We had a simple salad on the side...wonderful dinner.

Almond Biscotti

This was my first try making biscotti and I must say, this is a wonderful and simple recipe!!! It is so tasty! I added some coarsly chopped semi-sweet chocolate. I didn't measure the chocolate, I used what I had left over from some other baking. I think it was a wonderful addition to this recipe. I do recommend using slightly wet hands when shaping the dough as it is a very sticky dough. Enjoy:)

Cranberry Pistachio Biscotti

The Best Meatloaf

WONDERFUL!! Best meatloaf EVER! And it's so simple! I added an extra onion and a full cup of diced green bell pepper. It was nice and juicy! In addition, I used 1 cup packaged dry stuffing (instead of the soft bread crumbs)--this was recommended in one of the reviews. I also used more steak sauce on the top of the meatloaf--about 1/3 cup on the top of the meatloaf alone.

Angel Food Cake I

Very yummy but the directions for cooking just under 60 minutes is way off. Next time I might try cooking for just 45-50 minutes. In addition, I did not grease the pan (per the directions) and it was somewhat difficult to remove. I saw a recommendation to use wax paper at the bottom of the pan. I will try it next time I bake this cake. Otherwise, yummy cake just a wee bit dry from the 60 minutes of cooking.

Best Ever Banana Bread

Fantastic!!!!!!!!!!!! This is officially my go to banana bread recipe! I didn't have buttermilk so I created my own buttermilk. I mixed the 2% milk I had in the fridge and mixed it with a bit of white vinegar and let it sit for 5 minutes to create my own buttermilk. I was worried about using low fat milk to create the buttermilk, but it turned out very tasty:)
