Seasoned Turkey Burgers
Recently I moved into an apartment and had to donate my grill so I wasn't sure how these burgers would do in a skillet. To my surprise, they turned out fabulous and quite keep them from burning on the outside before they cooked through I added some water to the pan after the juices had time to accumulate and then covered to keep the steam. I always worry with ground turkey that I will undercook it, so I did try and check by cutting into the burger and then cooking them five minutes past when I thought they may be done. Luck was on my side as they were cooked, yet still juicy!

Cajun Chicken
I used this recipe just to make the chicken and also doubled the coating ingredients. I omitted the Spanish rice and instead served it with green vegetables on the side. My boyfriend adds hot sauce to everything, and this chicken does well with the extra kick. I agree with another reviewer's comment that the chicken is also great the next day either on its own or on top of a salad.

2-Step Inside-Out Chicken Pot Pie
Both my boyfriend and I love traditional chicken pot pie, but were looking for an option that we could make with less calories and fat. We found this deconstructed pot pie recipe and decided to give it a try. We used the lower fat version of the soup and frozen stew vegetables. We cooked the chicken in chicken broth versus oil and added garlic and onions to the skillet. Based on other reviews, we knew to add some spice. It turned out good, but could have used some additional spice. I also should have added some broccoli or cauliflower to the recipe. All in all, a good dish that I will try again.
