Italian Chicken Skillet
We loved this! I seasoned the chicken with salt and pepper, added a red pepper, green pepper and onion along with the garlic and cooked on med/hi almost like a stir fry. I added the wine and tomatoes and let it simmer on low while I cooked 8 oz of Penne pasta separately. I added fresh chopped spinach for about 5 minutes, then tossed in the pasta. I added Italian seasoning, because my diced tomatoes were not seasoned. I also used Primal Roots red blended wine from California. This is definitely going into the rotation!

Chef John's Smothered Pork Chops
Followed this recipe to a T. It was wonderful and dare I say, the best pan sauce/gravy I have ever made. Make sure you add the drippings from the pork chops and sauté the onions slowly the ENTIRE time required. What you end up with is a gravy to die for. Served it with Chef John's Mashed Potatoes and corn. Delish!

Pork Chops Italiano
We followed the recipe as is and even left out the mushrooms and bell pepper (last minute meal!) was delicous! I used two butterfly pork chops that we were looking to do something with and kept the rest of the ingredients the same. Served it with buttered linguine tossed with parmasan and green easy!
