Pumpkin Pancakes

These were SO tasty.Totally enjoyed!! Being a busy Mom, I changed a little to suit the timing I have in the morning. I started with the Complete Pancake Mix (made recipe for 12-14 pancakes). Before adding the water, I blended the Allspice, Ginger, & Cinnamon with the Pancake Mix. Then I added the water, then pumpkin...mixed well. Don't get me wrong, baking from scratch is the BEST. Thanks, Ruth, for the WONDERFUL recipe :o)

Chicken and Rice Soup II

This was really good. The whole family enjoyed it. Reading all the problems w/the rice turning the soup to mush, I came up with this solution. I made the soup according to the directions (adding a little more spices to my liking) and instead of adding the rice to the soup to cook, I made the rice first (I used instant rice) and then the last 30 minutes or so, just added the rice to the soup. Came out more like soup, not mush. Hope this helps anyone else. Thanks for the recipe Corwyn. This one is a keeper.

Cream of Pumpkin Soup

This was a VERY pleasant soup to eat, especially with the croutons. Definitely will make this again and again. I did do one little tweak to it...I didn't have heavy cream, instead I used half & half (fat free, too!) Still came out real creamy. Thanks for the recipe!

This was REALLY good. It wasn't too sweet. You actually enjoyed the taste of oatmeal instead of the overpower of sweetness. The kids had to add a little more sugar to theirs, but they loved too.

Oatmeal Pancake

These were good. I was totally surprised...I didn't think I would like them after I made the batter. I thought for next time, I'm going to try a packet of the flavored oatmeal. Should be just as good, if not better.

Brown Sugar Meatloaf

VERY TASTY!! My four year old was determined to get every bit off his plate. I did make a couple of minor adjustments. I made the meatloaf exactly as the recipe calls. The only thing I did different was pressing the meat into the pan FIRST, then sprinkled enough of the brown sugar to cover the top then spread the ketchup on top of the sugar. I drained off whatever fat had formed after it was done cooking. Thanks Starbuck....this one was a keeper in my book :o)

Irish Brown Soda Bread

After using & making Soda Bread recipes, this one was the best one. Came out just the way it supposed to. Was great to soak up the juice from the Irish Stew I made to go with it. Will keep this one in my recipe book. Thanks!

Irish Cream Bundt Cake

Made this for our St. Patty's Day feast yesterday and it was AWESOME!!! My husband couldn't stop "MMMMMMM"ing after each bite. Instead of the liquer, I used the real stuff-Bailey's Irish Cream. Absolutely delicious!! Will definitely make again and again. Thanks Sue!!
