Garlic Mashed Cauliflower

This really was pretty easy, and it was a big hit. I used 2 bags of Bird's Eye microwave steamers garlic cauliflower along with all of the other ingredients. I used a little bit more cream cheese, since 2 bags is a little more cauliflower than the recipe calls for. My CuisinArt sometimes gives me trouble, but the cauliflower pureed well. Overall, easy side, came out tasting great. I refrigerated it right away and microwaved it when it was time to serve and there was no loss of taste or texture.

Andy's Spicy Green Chile Pork

So easy, so good! My husband isn't usually enthusiastic in praising food, but he really went out of his way to say how much he enjoyed this. We got 6 burritos and 2 omelets out of this amount and still have a little bit left over.

Bacon-Roasted Chicken with Potatoes

This was spectacular and easy to cook. My husband really loved it. I used a chicken breast cut in half down the center, which took 2 strips of bacon per half to wrap. For the seasoning, I used salt, black pepper, garlic powder, and dill. Then, I drizzled olive oil over everything. I was only making 2 servings, so baked for 40 minutes at 400.

Dad's Excellent Scallops

To preface this review, I should say that I didn't use the butter and I didn't cook these on a grill, but in a skillet. I'd been pretty excited about these, but honestly, I wasn't the biggest fan of the real thing. They came out a little too salty (and I did use extra lean prosciutto), and it was very difficult to gauge whether they were done. They oozed a little water. I'm sure this would be better on a grill...

Gouda and Spinach Stuffed Pork Chops

Great idea! I'm a poor grad student, so I substituted what I had in the house (chipotle mayo for the horesradish mustard, garlic powder for the creole seasoning) and it came out pretty well. I only cooked two of these at a time (also had two red potatoes in the pan), and even 35 minutes in a 400 degree oven was FAR too much time. Going to try 20 minutes on 350 next time. I'd probably try browning in the pan first like the top viewer suggested, because the panko didn't brown almost at all for me (possibly due to the difference in seasoning). This was a good find, though. My boyfriend really enjoyed it, and it certainly felt like a real meal.
