Quinoa and Black Beans

I've made this 3 times and it's always great. I also add in a chopped red pepper after the garlic/onion phase, and a few tablespoons of a tomatillo salsa during the quinoa phase. The one can of beans is totally enough. As a main course this recipe serves four people, not 10.

Rhubarb Strawberry Crunch

I've made it twice, both times halving the sugar added to the strawbery mixture and adding a cup more strawberries, just to cut down on the sugar. I made the topping as directed and both times it was fantastic!!

Mostaccioli with Spinach and Feta

Great base recipe.. I used what I had on hand: fresh spinach, grape tomatoes, whole wheat penne and 4 oz of chevre. I feel like 8 oz would've been way too much. I also added a bit of salt and pepper to the sauteed veggies, and cooked the garlic by itself for a bit before adding in the tomatoes, then the spinach. Also, I didnt cook the penne all the way- about a minute short, then saute with the spinach mix, i think it adds a bit more flavor to the pasta.

Fettucine in Creamy Mushroom and Sage Sauce

Fantastic! I've made this many times for my roommate and boyfriend- both ADORE it. I use baby bellos and I puree the whole thing at the end with an immersion blender (since I'm not a huge fan of the consistency of mushrooms, but i love the flavor). Very tasty- like a stroganoff sauce.

Penne and Vodka Sauce

Great sauce! I added some parmesan a bit earlier, and also I cook my pasta a few minutes short of al dente and then add them to the sauce for a few minutes to finish cooking. It makes the sauce stick a bit better. I've also added spicy italian sausage, removed from the casings and cooked ahead of time which is also very tasty. It seems like this recipe is pretty fool proof- you can ad the vodka in the beginning or at the end and both taste the same i felt like, or you could cook longer if you want so the flavors marry a bit more.

Pork Chops with Raspberry Sauce

I added a little more spice than called for... I salted and peppered my pork loins first, then put the spice mixture on later. They were fantastic, the sauce was very tasty. I also use balsamic since I didnt have white wine vinegar. Also, watch your cooking times- I had half inch thick loins and they probably only needed like 3-4 minutes per side.

Roasted Red Pepper and Tomato Soup

At first I thought it was a little bland, but soon realized I had forgotten my "salt to taste" which is very important- I added about a tablespoon. I also added a tablespoon of tomato paste, left out the roux (which I didnt think you needed) and added a 1/4 cup of milk. With the sour cream, and a little manchego cheese on top, it was FANTASTIC. I will definately make it again, just maybe on the weekend when I have more time.

Tofu Parmigiana

very good- I used extra firm tofu, and experimented with different thicknesses-- I believe that sticking to the 1/4 or smaller is better, otherwise the tofu was a little mushy for me. Made my own tomato sauce, and didnt have an mozzarella so I added extra parmesan on top instead. I will definately be making this again!

Tuna Noodle Casserole II

I didnt put the chips on top, just added another layer of cheese. Also, I almost didnt put the salt (thought that there's enough in condensed soup) or garlic (didnt think it was needed) in , but ended up following the recipe exactly and it was the creamiest and most delicious tuna casserole I've ever had.

Veggie Burgers

These were very good. A little sticky to work with but when you drop the dough in the flour that pretty much takes care of the stickiness. I also added some onion salt, black pepper and a little extra cheese and soy sauce to my mixture. I also made them bigger- I ended up with 5- so I had to cook them longer. Just cook them till they're brown. Overall very good, tasty but not too spicy (although i imagine you can make them as spicy as you want). My vegetarian boyfriend was very very happy with them, since we've tried some package mixes which were horrible. Thanks!

Mango Salsa Salmon

Tasty and simple recipe, but don't use canned mangoes. We had a left over can in the pantry, and it was a bad choice-- although it still tasted ok, I imagine it must be much better with the fresh fruit.

Baked Sweet Potatoes with Ginger and Honey

Absolutely wonderful. I've never liked the whole 'sweet potatoes & marshmallows' thing, but this was perfect-- not too sweet and a great dish for Thanksgiving!
