Marinade for Chicken

Really good marinade for chicken. I tenderized my skinless boneless chicken breasts and then put the marinade in a zip bag with the chicken. I probably marinated it for about 1 1/2 hours and then grilled on my indoor grill. VERY moist and flavorful. I did omit salt and added garlic powder and onion powder and scaled the recipe back for 6 and it was plenty. Also used olive oil b/c that is what I had. I know some people don't like reviews when we change the recipe but sometimes it just is strictly a personal preference as to the changes made. I practically add garlic and onion to most everything so that is why I added them to the marinade.

Potato Salmon Patties

This is the only salmon pattie recipe I use. It is very tasty. The addition of dill weed gives it a little extra zing. Not overpowering. Great recipe. Try it you won't be disappointed.

Beefy Baked Ravioli

This was a very easy ansd tasty meal. I am a pasta lover so I am always looking for something new to try. My family loved it. I doubled the recipe. I also added extra seasonings to my jar of spaghetti sauce such as minced garlic, minced onion, Italian seasoning and cayenne pepper. I like a little zip to my sauce. I will definitely make again.

Pasta with Scallops, Zucchini, and Tomatoes

I loved this recipe. I used shrimp and spaghetti instead of scallops and linguine. I also used fresh chopped tomatoes from my garden. Added a little tomato sauce, about 1/4 cup to sauce. Turned out great. Family loved it!

Banana Caramel Fluff

I made this dessert for my family. I am not much on banana desserts but this one is a keeper with a few changes. I used a muffin tin and put 1 crescent in each one. I formed it to fit the muffin cup. I also added brown sugar and cinnamon to the mix. I would think it would be bland without those flavors. I spooned filling in each cup and refrigerated it while we ate dinner. I baked them as directed and scooped them out into small dessert bowls. I topped it with french vanilla ice cream and caramel sauce. ABSOLUTELY DELICIOUS!!! My family went nuts over them. Easy to pepare too!

Black Forest Mini Cheesecakes

Fresh Southern Peach Cobbler

I made this cobbler yesterday and served it to my family. They loved it. I followed the recipe but doubled the dough and not as much cinnamon sprinkled on top. I also loosely covered the pie with foil the last 6 minutes to keep it from over-browning. Turned out great. Very rich and delicious with vanilla ice cream. Try it, you won't be disappointed!!!

Mandarin Orange Chicken

I fixed this dish for my family and they loved it. It is very flavorful and easy to make. I would recommend it to anyone who likes a sweet-spicy dish. I added salt and pepper to mine and cooked my rice in chicken broth. I cut my chicken breast halves in quarters. Try it and you won't be sorry.

Apple Crumb Pie
