Add a can of diced tomatoes, and it becomes what we call "cuban chil"i ... ummmm! The family is more likely to like something called, "chili' than 'picadillo'.

Downeast Maine Pumpkin Bread

Wonderful! Per reviewer suggestion, doubled ginger, added raisins and topped with walnuts - decreased sugar by 1/2 cup. Traveled well and remained moist even after a week on counter in plastic wrap. Recipe made 4 mini-loaves and 2 hugs muffins.

Chocolate Crinkles II

My finicky husband swears these are just like the crinkles from his favorite bakery/sandwich shop! Followed recipe, used high quality cocoa powder, and 1/2 the recipe to make about a dozen 2inch diameter cookies using a silpat cookie sheet liner. Came out perfect - thank you!

Apricot Pork Chops

Excellent! I first browned the pork, as others recommended, and only cooked for about 40 minutes (will decrease by about 10 minutes next time). Will also try adding grilled pineapple, snap peas, carrots and onions for a sweet-and-sour pork.

Wonderful - and so easy! Now I can whip up some "egg" nog whenever the urge strikes since I often have these ingredients on hand (I actually substituted soy milk and used sugar-free/fat-free instant vanilla pudding).

These were excellent and very easy! Sauted a can of mushroom slices in a bit of butter with a sprinkling of onion salt. Also added a little bit of sage (by mistake - but came out excellent!)

Mushroom Meatloaf

EXCELLENT! Did not include the whole mushrooms, but everything else was followed exactly as instructed. Did not use a meatloaf pan - baked on broiler pan which allowed most of the fat to drain. Covered with foil after one hour and removed from oven 20 minutes earlier than specified.
