Extra Easy Hummus

My hummus has never ever turned out quite right until this recipe. I substituted sesame oil for the olive oil, garnished it with fresh cilantro, and served it with a black olive tapenade (recipe by TERESITA79).

Key Lime Pie VII

So easy and so delicious. I've never made key lime pie before, but with 1300+ reviews and such a high rating, I figured that I couldn't go wrong. 2 cans of condensed milk and the allotted amount of key lime juice gave this the perfect balance of sweet and tart. It took me closer to 12 minutes to get it cooked to the proper consistency (I think that has more to do with my oven than the recipe itself). The ONLY pie my boyfriend will eat is key lime, and he gave this 2 thumbs up. It's definitely a keeper!

Glazed Corned Beef

Never cooked corned beef before, and wanted something other than the traditional "boiled with cabbage" meal for St. Patty's day. This was perfect!!! I had cocktail sauce on hand, so I used that in place of ketchup and horseradish. I had some orange balsalmic vinegar, so used a bit of that combined with the regular vinegar. I have to admit that when I tasted the glaze in the pan, I was a bit nervous, but once it was on top of the meat and baked, it was AMAZING!!! I foresee this being a St Pat's tradition in my house!

Oven Roasted Potatoes

A nice, simple companion that will work with many meals. I boiled the potatoes for a little bit first, so as not to have them spend as much time in the oven. These are nice with a bit of parmesan cheese sprinkled on top as well.

Sugar-Free Peanut Butter Cookies

I've never made anything remotely like these before, but I wanted to add something diabetic friendly to my christmas cookie trays. I really like them. I took the advice of others and a) cut down on the splenda, b) added some instant oatmeal, and c) let them cool fully before attempting to do anything with them. They are SO yummy and really do melt in your mouth.

White Chocolate Orange Cookies

SO GOOD!!! I used pecans instead of walnuts, as that's what I had on hand. I also did the half butter, half butter flavored shortening (I do this for all of my cookies, b/c I think it gives a better texture).

Smooth Sweet Tea

Originally, I thought to myself, "this is a bit weak". Then I re-read the ingredients and realized that I only used TWO teabags. OOPS! Once I went back and added the remaining teabags, it was perfect. Add another 5 star rating for this simple yet delightful tea. Thanks!

Port And Mushroom Sauce Chicken

I used oregano instead of tarragon and added garlic instead of shallots. It was very tasty to me. My BF says that he thought I should have added more port, but I personally think that would overpower the dish.

Bow Tie Pasta with Sausage and Sweet Peppers

What a simple meal, but so delicious!!! And it can be tweaked for your tastes. I added onion and used red, green, and yellow sweet peppers. While it was cooking, I added a dash of some McCormick onion and garlic seasoning. This will definitely be a repeat dinner in this house!

Taco Dip I

This recipe is great, and also flexible. I've made it where I've lined the serving dish with refried beans and then continued as written. I've also done it with adding some leftover taco beef on top of the sour cream/ cream cheese layer. I'm not a guacamole person, but I'm sure that would work well in the recipe also. Today I am going to try it using some greek yogurt in place of the sour cream/ cream cheese, as that's what I have in the house.

Turkey Shepherd's Pie

This recipe is very good as written, yet also easily adapted for your specific tastes or what you have on hand. When I made it, I skipped the carrots and used some leftover green bean casserole in addition to the corn. I also gave it a bit more "punch" with fresh black pepper and some onion salt.

Pineapple Ham Loaf

I had to use the Town House Flipside crackers (half cracker, half pretzel) as that was all I had on hand at the time. This recipe didn't specify a vinegar and all I had was balsamic. I thought it would be too strong, so used less than the 1/3 cup. It worked very well. It came out perfectly delicious. It was a HUGE hit and I will definitely be making it again!

Baked Potato Soup

The recipe is easy and very yummy. The only reason I gave it 4 stars instead of 5 is that my BF and I both thought it was lacking (just a bit) in flavor....had to add a bit more salt and pepper (as well as a dash of garlic powder). I did make a few changes in my most recent batch. Not because there is any problem with the recipe as written...I just had to adjust for items that I already had on hand. I didn't have the half and half, so I used cream of broccoli soup (diluted with a bit of skim milk). I had some leftover broccoli florets on hand, so I tossed them in as well. And for the cheese topping, I combined some shredded cheddar jack cheese and fresh parmesan cheese. Enjoy this soup...it is perfect for a cold wintery day!

Russian Tea Cakes III

I have never made these before, and I pleasantly surprised at how easy they were to make. And delicious!!! I made 2 batches. One, following the recipe as written. For the second, I took out the walnuts and mixed some Hershey's cocoa with the confectioners sugar (both in the cookie and for the dusting afterwards). "Black" Russian tea cakes!!!

Raspberry Oatmeal Bars

Super easy and Super yummy!!! Tried them once, on a whim. Had many requests for additional batches. The first time, I made just as the recipe called for. GREAT!!1 Then I played around. added some sliced almonds and brown sugar to the topping. Substituted blueberry jam for the raspberry. Used strawberry jam and added some diced walnuts to the cake mixture. All variations turned out amazingly well and got rave reviews.

Marinated Spicy Pork Chops

To use LoL Cat speak...... OM NOM NOM!!!! I always have a tendency to dry out pork chops, especially on the grill. These turned out perfectly for me on my first attempt. I will be making these again. The only change I made was to use lime juice as I did not have any lemon juice.

Swedish Meatballs I

My first attempt at making Swedish Meatballs and it was a success. My sauce had a few adaptions to accommodate what I had on hand. I didn't have any evaporated milk, so I used some 2% milk and added a couple of spoonfuls of sour cream to help thicken it up. I also had some leftover sauteed mushrooms that I tossed in, mainly b/c I didn't want to throw them out. This is a definite keeper!!!
