Quiche with Kale, Tomato, and Leek

Yum! So delicious. I didn't have any kale, so I used Swiss chard instead. A flavorful and healthy breakfast dish.

Moist Chocolate Muffins

I liked this recipe more than most. Probably could have baked the muffins a few less minutes, but they were moist and not dry in the middle. A little crunchy on the outside. I was a bit short on Greek yogurt, but they came out fine. I've been looking for a recipe that duplicates those terrible (but delicious) grocery-store chocolate muffins. This came close.

White Cheese Chicken Lasagna

Fabulous! Very rich. Might cut down on the butter by half and replace some of the ricotta cheese with Greek yogurt next time, though. Delicious!

Tiramisu Layer Cake

I used the Heavenly White Cake recipe from this site and added 2 T espresso powder to the batter. I also dusted the cakes with cocoa before they baked, then followed the recipe for the filling and icing on this site. I added amaretto liquor in the filling. The cake is moist, the filling and icing luscious! My husband, a tiramisu fan, loved it, although he did comment that the cake should have been soaked in coffee (there wasn't any made when I did the cake). Other than that, it was delicious!

Lemon Cupcake with Blackberry Buttercream

Delicious! A hit at the party I took them to. The recipe makes about 12 cupcakes if you fill the cups 3/4 full. I also added a second lemon and zest, and it was perfect. The frosting also makes enough for twice as many cupcakes, so I made a gluten-free batch using Bob's Red Mill All-Purpose Gluten-Free flour and they were also quite tasty. I used strawberry jam for the frosting. Fantastic!

Beet Bundt Cake

Fantastic recipe! We received a lot of beets from our CSA, and I had already made beet soup and was trying to figure out what to do with them. I was pleasantly surprised when this cake turned out to taste just like chocolate cake and nothing else. The batter does turn a lovely mauve color, but don't worry...it all comes out great!
