Slow Cooker Chile Verde

It is the perfect weekday meal. It was easy to make and very delicious. I used only 1 can of the green salsa and that was plenty. I typically smother my tacos with sour cream, cheese, and cilantro, however, I thought it was so flavorful that I didn't add anything. This will definitely be my new go-to meal when I am having a busy week.

Neapolitan Cupcakes

This turned out good. I was really pleased with the aesthics. However,next time instead of making a double batter of brownie mix and one batter of strawberry cake mix, I will make a double batter of strawberry cake mix and one mix of the brownie. I was scraping the bowl of the strawberry cake mixture to create 24 cupcakes and was left with tons of brownie mix. Not a big deal because I just baked the brownie mix on its own.

Irish Cream Bundt Cake

I made this cake for my husband's bday. We celebrated with some friends and have one member who is a huge critic when it comes to dessert, he absolutely loved it as did everyone else! It was super easy to make (as I am not a baker). I took it out about 12 minutes earlier than the directions said, it was incredibly moist. I will definitely be making this again.

Super Sausage Gravy

It was just okay to me and my guest. I don't think anyone but one person got up to get seconds. We felt that it was missing a lot of flavor. Maybe if I add onions next time it will give it the kick that it needs.

Perfect Turkey

First time hosting Thanksgiving and roasting a Turkey so I made sure to follow the instruction exactly and it turned out wonderful! My husband couldn't stop talking about how juicy the turkey came out and said it was the best turkey he has ever eaten. Everyone that came made sure to take some home with them. You definitely need room in the refrigerator to brine the turkey, we had to do some rearrange but it worked out. I know that someone suggested using a bag and filling it with water and putting it in a cooler filled with ice, I will try that next year.

Easy OREO Truffles

This is a family favorite during the holidays! However, you have to have a serious sweet tooth to really appreciate it...which my family does. I put the mixture in the frig for a bit to make it easier to roll. Once I roll them I put them in the freezer and let it sit for a couple of hours, it makes it easier to place in the melted chocolate, the chocolate immediately hardens around the balls when I place them on the waxed sheets.

Meatloaf with Italian Sausage

I never tried meatloaf before, though my mom made it several times when I was growing up. Something about putting just ground beef, egg, italian seasoning together and then putting ketchup on top of it just didn't sound appealing. I was looking for something new to eat and saw all the great reviews and thought I would suck it up and finally try. It was SO delicious! I love the taste of the onion and pell pepper. If you don't have a breadpan to put your meatloaf in a muffin pan will work just as well. Thanks for making me a believer!
