Lighter Banana Muffins

I had 1.5 REALLY ripe bananas and didn't know what to do with them until I found this recipe. I halved it and ended up with 9 small muffins (actually, they were the standard size that muffins used to be...). I used silicone muffin cups and they came out with ease. The muffins were a bit chewy but had a good flavor.

Vegan Mac and No Cheese

This recipe is pretty good, and I will make it again with a few changes. I will reduce the lemon juice a little bit because it is a bit strong for my liking, and I will add a little extra garlic powder (or maybe a little adobo).

Awesomely Easy Sesame Asparagus

I spent my childhood disliking asparagus and only started enjoying it recently. I used this recipe for my first attempt at asparagus, and it was great! The only change I made was to add chopped garlic and a few shakes of adobo to the oil.

Beef Fried Rice

I made this for dinner tonight. My boyfriend and I both liked it. Due to the suggestions in other reviews I used 5 TBS of soy sauce and mixed the sugar in before adding it to the meat, egg and rice. Because of allergies, I omitted the onion and used celery instead. Delicious! I will make this again.

Pork Chops with Dill Pickle Marinade

This was great! I have some new dietary restrictions that prevent me from eating many seasonings (including garlic and onions!) so I was happy to find this. I used kosher dill pickle juice and marinated the chops for about 20 hours (my chops were a little green). I put a little evoo on the chops and seasoned them with salt, pepper and basil, before cooking them in the oven. They came out moist and delicious! Thanks!

Lentil Rice and Veggie Bake

Yum! I had to alter this recipe based on what I had on hand (green lentils, brown rice and for veggies: carrots, parsnips, tomatoes, zucchini, broccoli and mushrooms- not a veg, I know), however my boyfriend and I both really liked it. I will be making this again!

Pumpkin Gingerbread

YUM! I made this yesterday and my boyfriend and I have been devouring it. The only changes I made were: to cut the recipe in half, so there is only one loaf. Also, prior to baking, I diced some fresh ginger that had been used to make tea, and caramelized it in some of the leftover tea with sugar. I then topped the bread with the little bits of ginger. It was great!

World's Greatest Vegetable Broth

Delish! I had to tweak the recipe a bit (I can't eat cooked carrots and didn't have any turnips), but it still came out well. I used the broth to make Spicy African Yam Soup (from this site). It was great. I have a number of food intolerances, and making my own broth will give me so many more cooking options. Yay!

Chocolate Oil Cake

Yay for a yummy VEGAN desert! I added a handful of chocolate chips and cooked it in a bundt pan (50 minutes). It stuck, but tastes great. Next time I will try to use half applesauce and half oil.

Banana Pudding I

I made this pudding for my very picky boyfriend and he loved it. I am lactose intolerant (but I can handle butter) so I made it with plain soy milk instead of the cow stuff, and it came out great. Mr. Picky eater didn't even know that I used soy. I put the heat at medium, and didn't have any trouble getting the pudding to thicken.

Light Wheat Rolls

This recipe is VERY forgiving! Making these was my first experiment with yeast bread. I made some changes and mistakes, but the bread was still great! I have food intolerances and cannot eat store bought bread, so I decided to make a loaf and rolls. I used olive oil in place of butter, used 2.75 cups ww flour and about 1.5 cups AP flour, put too much dough in the loaf pan, made each roll too big and accidentally set the oven to 450 instead of 400. With all of my changes, the bread tasted great after 11 minutes. The crust is a little dark (but not burnt tasting) and the inside was soft and delicious. I will make this recipe again and cook at the correct temperature. Thank you, I can eat bread again!

Chewiest Brownies

Yuuuuum! My boyfriend (a chocoholic) and I loved these. We could have eaten the entire batch in one day. I usually make MMMM Brownies (delicious, but cakey not fudgy) but was out of chocolate chips so I decided to try something new. Like others, I reduced the cocoa to 3/4 cup (maybe a bit more), and the sugar to 1 1/2 cups. I am allergic to milk and soy so I used a 1/2 cup of extra light olive oil instead of the melted butter. I baked mine for about 37 minutes at 300 and they came out wonderfully! Thanks Krissyp, I will be adding these to my chocolate repertoire!

MMMMM... Brownies

These brownies are delicious! I have several allergies so I made mine with Olive Oil (1.5 Tbs) instead of butter, and used soy-free chocolate chips. MMMMM is right, they only lasted three days. My only complaint is that they were VERY soft. Maybe I took them out too early? I'll cook them for 27 or 28 minutes next time.

Spicy African Yam Soup

Yum! I made this soup for dinner tonight, and it was delicious. I did make a few changes, I used vegetable bouillon instead of chicken broth, added a few red pepper flakes and increased the amount of thyme, garlic, cumin and peanut butter. The flavor is great as is, I just wanted my soup to be a little more intense. Update: I have made this several time, I usually add two bay leaves (remove before adding pb) and today, I added coconut milk (because I had 3/4 of a can left). Delicious!!!

Green Velvet Soup

Delicious! I really liked this vegan soup. The recipe is pretty forgiving (I used vegetable bouillon, not broth, only had one potato and used frozen broccoli and spinach). I added a handful of frozen peas (because I had them). For me, the flavor was good, but needed a little enhancement, so I added garlic a little adobo and increased the basil and pepper. Still, I think the recipe was great and will make this again!

Basic Flaky Pie Crust

This is a great recipe. I had never made a pie crust prior to using this recipe, and it was super easy. I don't think i will ever go back to ready-made crusts or mixes. I have made this with shortening and with lard (soy allergy), and both came out well. Thank you!
