Black Halloween Punch

Sugar Free Eggnog

This is pretty good! I made it with soy milk, so it was the antithesis of egg nog (no egg, no dairy, no sugar, lol), but it tasted like egg nog. I will make this again. Thanks!

Orange Drop Cookies II

I made these cookies but based on the reviews of others I made a few changes. I used a cup of orange juice instead of 1/2 a cup of water, and added about 1 tsp. each of ground ginger and nutmeg. Also, I used half butter and half shortning (didn't have enough). I baked the cookies in muffin tins and they held their shape. They came out more like cake than cookies. The flavor was light but pleasant, I just wasn't thrilled with them.

Sophie's Zucchini Bread

This was my first attempt at zucchini bread. Based on the reviews of others I added (about a teaspoon) nutmeg and used 1/2 oil and 1/2 applesauce. The bread tasted great, but I had trouble getting it out of the pan (maybe because I decreased the oil?). Also, about 1 cm of the middle of the top of my loaf (where it split after rising)didn't cook. Still, this is a great recipie. I took it to work and got rave reviews from the rest of the faculty.

GA Peach Pound Cake

I made this cake for the teachers I work with, and everyone loved it! Following the suggestions of others I added nutmeg, cinnamon and ground cloves. I used about 2.5 cups of peaches, and think I will up it to 3 next time. There will certainly be a next time!

Banana Pudding I

I made this pudding for my very picky boyfriend and he loved it. I am lactose intolerant (but I can handle butter) so I made it with plain soy milk instead of the cow stuff, and it came out great. Mr. Picky eater didn't even know that I used soy. I put the heat at medium, and didn't have any trouble getting the pudding to thicken.

Sugar Cookie Icing

My sister and I used this recipe to make favors for a birthday party. We had to make a lot of icing, and were looking for an easy recipe. This worked very well. We used lemon extract instead of almond, and added extra milk and corn syrup. The cookies are really pretty and the icing tastes great! (We made one batch of icing with vanilla soy milk, and it turned out well).
