Japanese Zucchini and Onions

Reviewed: Jul. 23, 2009
This was pretty good, however, next time I think I will add garlic and/or ginger.

Chocolate Oil Cake

Reviewed: Jul. 22, 2009
Yay for a yummy VEGAN desert! I added a handful of chocolate chips and cooked it in a bundt pan (50 minutes). It stuck, but tastes great. Next time I will try to use half applesauce and half oil.

This is much lighter than standard potato salad. It was a nice change. Thank you!

Zucchini Brownies

Reviewed: Jul. 20, 2009
I thought that these were only so-so. Granted, I made a few changes (mostly b/c my pantry wasn't as well stocked as I had thought prior to my bought of insomnia!). I threw in a handful of chocolate chips instead of the walnuts, used a combo of oil and apple sauce as well as a combo of Splenda and sugar. My problem with the recipe is that it wasn't chocolatey enough for me. I wanted a little more umph in the flavor department. Perhaps I should have made the frosting. Maybe I will do that when I get home from work and update my rating.

Tuna Piccata Pasta Salad

Reviewed: Jul. 18, 2009
This was pretty good! I added a touch more dijon and used regular spaghetti (I was out of angel hair). I had it warm for dinner, but the cold leftovers were much better. Thanks, Kelly!

Nauvoo Gingerbread Cookies

Reviewed: Dec. 27, 2008
I made these cookies for Christmas and they went over very well. I did make some changes (canola oil instead of lard, more ginger as well as the addition of ground clove, nutmeg, allspice and vanilla extract), but the recipe was a great starting point.

Chocolate Chip Pumpkin Bread

Reviewed: Dec. 12, 2008
This is fantastic! I made a few alterations to the recipe... I don't like chocolate chips in bread, so I omitted them. I made one loaf with just walnuts (yum) one with raisins and walnuts (double yum) and the third with raisins, walnuts, a pinch of ground ginger and a dash of vanilla extract (triple yum).

Basic Flaky Pie Crust

Reviewed: Nov. 24, 2008
This is a great recipe. I had never made a pie crust prior to using this recipe, and it was super easy. I don't think i will ever go back to ready-made crusts or mixes. I have made this with shortening and with lard (soy allergy), and both came out well. Thank you!

I made this with rice milk so that it would be dairy free. Great, easy recipe. Thanks!

Sweet Potato-Turkey Meatloaf

Reviewed: Nov. 13, 2008
This recipe is really good! I decided to cut down on the amount of sauce based on other reviews. I just eyeballed it, but I think I used about half of what the recipe called for. Additionally, I put a little extra garlic, along with some oregano and basil. I made this on Tuesday, and had the leftovers last night, the texture really does improve overnight.

Golden Yam Brownies

Reviewed: Sep. 2, 2008
I made this recipe for the first day of school. My co-workers really liked them, and the pan is empty. Thanks for a great recipe. Oh, there really is no need to cook the yam or use canned, just follow the recipe and shred the raw, peeled yam and it comes out fine.

My first attempt at guacamole turned out really well! I only added one tomato... other than that I followed the recipe. Thanks!

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Aug. 20, 2008
These cookies came out really well. They are light and chewy. I added nutmeg for a little more flavor, used margarine instead of butter (dairy allergy) , and used a mix of brown sugar and Splenda brown sugar (all I had). Yum!

Garlic Spinach Balls

Reviewed: Apr. 20, 2008
These spinach balls are wonderful. I was looking to recreate my friend's recipe, and this one worked very well. I used margarine and omitted the cheese because I am allergic to dairy, but the spinach balls were still a hit. Thanks!

Old-Fashioned Rice Pudding I

Reviewed: Mar. 15, 2008
I made this recipe yesterday and wasn't thrilled. Maybe I just don't like rice pudding, I'd never had it before. I just felt like it just tasted sweet, but didn't really have much flavor (although, I didn't have rasins... maybe they would have helped).

Grandma Minnie's Old Fashioned Sugar Cookies

Reviewed: Dec. 17, 2007
These cookies are very easy to make. We chilled some of the dough briefly (mainly because there was so much that I couldn't roll it all out at once), but it rolled out well at room temperature. We made one batch with butter flavored crisco and vanilla soy milk because I am allergic to dairy -- and they came out fine.

Mini Pineapple Upside-Down Cakes

Reviewed: Nov. 19, 2007
My mom and I used to make pineapple upside-down cake all the time when I was little. I needed to make a dessert for my brother's surprise party, and these minis were perfect. The only thing I did differently was to use the jumbo muffin tins (bake for 20 min), and to cook the cherry into the cake. I got rave reviews from everyone at that party. Thanks!!!!
