Easy Cajun Jambalaya
I'll go with 4 on this one. I scaled it up to 40 servings for a large crowd and added some shrimp, ham and crushed tomatoes. They were happy and it met my expectations.

Aztec Casserole
Sorry I can't give it a five. It was good but not great. I scaled it up for a large crowd and they liked it and several asked for the recipe. This ia a variant on an old war horse of a recipe and can be considered pretty reliable. In my case I took advice of other reviewers and served on bed of crushed chips rather than layered corn tortillas. With 70 people in the buffet line it would have been too risky to have the tortillas be hard to cut through, and the bed of chips instead made it very spoonable. Just poor some enchilada sauce over the bed of chips and also mix some into the chicken mixture and it will be fine.

Mexican Salad
I certainly support the other reviewers who gave this 5 stars. I scaled it up to 42 servigs and served it in large mex buffet and they loved it. The only thing I would recommend is that if you go with a large quantity be careful with the dressing - it's a little tangy and you might want to add half and see how you like it before you put the rest on. We did that and kept checking it and then ended up adding in increments until we had put it all on anyway. Turned out great and the tang of the dressing is needed to spruce up the beans. I'd say exact proportions of the various beans are optional and you can add as much of any bean you want.
