Cherry Bliss Brownies

Yummy:) Added choc chips to brownies. Probably a bit extra cream cheese, too. Just made brownies as suggested on pkg (for how many eggs, etc).

The Best Rolled Sugar Cookies

Very sugary, no depth to flavor like recipes that use buttermilk &/or have lemon or almond flavoring. Makes a pretty soft cookie for first roll out.

Mom's Zucchini Bread

Not the best; more cakey than traditional style...did follow another reviewer's advice to use 1c brown sugar & 1c white & replaced 1/2 oil with applesauce... even added choc chips to one loaf. Not as good as other recipes I've had; kinda bland & not as moist as used to... would add some cloves or something to give more of a kick & maybe try again with only oil, though I've been able to sub applesauce to other muffins/breads successfully in the past.

Corn Dogs

I'm no corn dog connoiseur, but very easy & kids loved 'em! I very rarely eat hot dogs, but ate this with honey, mustard, & ketchup. Used mason jar to dip & refrigerated batter prior to use & dried off hot dogs to help it stick. Rotated hot dog with batter in frying pan of hot oil; done in less than a minute. Very fun to do with kids & watch puff up:) Oh, did not use pepper.

Grandma's Peach French Toast

Very yummy:) Used expired Texas Toast I'd been keeping in fridge, so a bit soggy on bottom layer since soft. Added more eggs & milk. Used fresh peaches & put cinnamon & lil nutmeg in the syrup at base, in batter & atop along with pecans. Will do with wheat to get some fiber into breakfast!

Buckeye Balls II

5 stars with the changes I made; otherwise too sweet... Doubled; used 6c powd sugar & 1c flour; need more choc chips to coat b/c I make smaller (better choc:pb). GO BUCKS!!

Double Layer Pumpkin Cheesecake

Yum! Used a gingersnap cookie crust (homemade cookie dough with less oil & sugar) & added more than a "pinch" of cloves & nutmeg. Serve with the real whipping cream; it's cheesecake! Just don't make gingersnap crust too thick at lower edge; powerful flavor.

Maria's Stuffed Chicken Breasts

4.5 stars... Tastes like a stuffed shell with chicken instead of noodle. Used fresh spinach, garlic & onion powder, touch of basil, & parmesan cheese in fillling. Put extra filling atop & added just about 2/3c sauce over chicken (just enough to cover). Baked with sprayed foil atop (so cheese wouldn't stick) till last 15 or so minutes. Very moist. Served with spaghetti (topped with remaining sauce) & green beans.

Lana's Sweet and Sour Meatballs

Quite tasty! Used 1# beef vs. 2 and had plenty of meatballs. Did have to TRIPLE sauce (not pineapple, carrots, peppers or cornstarch, though). Omitted carrots & bell pepper (if had, would use colored bell peppers vs. green). Tweeked measurements of spices to own liking (less salt, pepper, sugar, red onion). Would use fresh ginger if I had it & maybe add a clove of garlic or two to the meatballs.

Cut-Out Cookies Made with Oat Flour

Dry, flat sugar cookies. Oats added a teeny bit more flavor, but dryness, too. Put a yummy lemon glaze over, but not impressed. Made many a sugar cookie & other doughs; this one is not as easy to work with as others mentioned. I'd prefer a cookie dough that takes buttermilk or the like. Dough is tastier than the baked cookie. Don't usually leave bad reviews, but I love oats & this is not the recipe for them.

Chocolate Truffle Cookies

Hubby says "best cookie he's ever had" ...he's had many & adores dark chocolate. To solve crumbling that many complain of, just use baking SODA vs powder. Done this with other cookie recipes that call for powder vs soda (not many do). To avoid mess, just used (generous) COOKIE SCOOP (with built in scraper) vs. rolling into balls. Baked nicely shaped. Used salted butter, so omitted salt. B/c of what was on hand, used 8oz of 72-86% choc bars (that needed used up) vs 4oz unsweetened & 1c semis. Also used mini chips for mix in vs regular sized chips. Tasty!! Would suggest pure vanilla (used madagascar bourbon vanilla) in all recipes over imitation. No problem getting off sprayed cookie sheet.

Clone of a Cinnabon

Quite tasty; not as gooey as a "cinnabon" (even by inverting & adding more brown sugar & cinn to filling) but ok by me:) For more "goo," probably just need to add more butter, brown sugar, & cinnamon to filling. Let rise in warm oven then just turn oven on to bake while they're in there to ease things up a bit. To get eggs fresh from the fridge to room temp quick, just make the milk a bit warmer than needed- just be sure not too hot to kill yeast! Used butter in lieu of marg. Yum!

Chicken Flautas

Used this recipe as a guide...cooked a chicken breast with ~2-3oz cream cheese, ~1/4c salsa, ~1/8t cumin, ~6drops lime juice then shredded. Put into 9 microwaved corn tortillas with the cheeses listed. Rolled, sprayed with cooking oil spray & baked about 25min. Served with rice & corn & dipped in sour cream & catalina (kids). Quite tasty; can't say I followed the recipe exactly...much tastier than something like a taquito that you'd buy from the store.

Cream Cheese Sugar Cookies

Good flavor, cookies did not rise up as much as I'd hoped. Soft & tasty, but not very tall... a bit of a bother to have to use so quickly out of the fridge, especially with my four young kids trying to make their own cookies (playdough rollers are great for them, BTW). Worked well for lollipop cookies we made by coloring with paste. Will try again to see if they rise better. Recipes with buttermilk give softer, lighter texture.

Spinach and Potato Frittata

Yummy! I used it as a guide as I do with most recipes. Used what I had on hand; replaced spinach with asparagus (less), red onion for green, parm, ched, & muenster cheeses t.out/ atop, sliced tomatoes with basil on very top. Reduced recipe to fit my saucepan. Overall good idea:) Took closer to 15 min to cook after adding eggs.

Banana Oat Muffins

Possibly better with less modifications. Texture not at all like banana bread, moist but heavy & kinda chewy. Needs flavor like cinnamon, but would be more bland & bitter without also adding sugar or blueberries, etc. My mods: added applesauce vs oil per several good reviews, 1/3 of flour as baby wheat cereal (basically wheat flour), powdered milk. Pretty bland alone, better with cinnamon sugar sprinkled atop before baking, much better with mini chocolate chips; kids loved this way, of course. Have definately had yummier healthy muffins, bake a lot.

Sweet Dinner Rolls

Excellent as dinner rolls, but better as cinnamon rolls! Everybody loves 'em & they're slightly healthier than Mom's butter crescent rolls (less butter; even better that they're less work:)!! I just "tuck" them under like shaping a loaf of bread & dip the tops in butter; don't need 1/4c.

Butternut Squash Soup

Tastes like creamy cheesy potato soup! Only needs one package of cream cheese (never had it with two... neufactel at that). Would be great base for cheesy broccoli soup or good with carrots added. Followed another's suggestion and cooked squash first in microwave about 10 min (cut in half & place insides down).
