The Best Lemon Bars
I have tried many lemon bar recipes and by far this is the best one! I did have to re-make the crust because when I mixed the crust up the butter must not have been soft enough and when it baked it was to crumbly. The next one I melted the butter and then mixed every thing together with an electric hand mixer then patted it in the bottom of a glass 9X13 dish and it tuned out perfect. I did have to cook it about 5 mins longer than stated. I did follow the advice of some other reviews and used about 1/2 cup fresh lemon juice(3 lemons) and the zest of 2 lemons. These were so yummmy, the right amount of tart to sweet!!! I will definitely make them again.

Cheesy Chicken and Rice Casserole
I loved this recipe! It was so easy to prepare and my family loved it! Instead of microwaving the the chicken I sauted it in butter and seasoned the chicken with garlic and onion powder, salt and pepper. Then I cut it up into bite size pieces.

Whit's Chicken Enchiladas
Excellant recipe, but I used boneless chicken breast and cooked it in chicken broth instead of water to give it more flavor. I also thought 1 cup of heavy cream would be to much to pour over top of it, but it wasn't. I served it with sour cream and salsa on the side. My family loved this recipe. I definetly make this over and over again!!
