Oatmeal Bread I

Reviewed: Jan. 8, 2014
I didn't have all night, so I proofed the bread over my warm oven. I just gave it about twice as long as usual to proof each time. This bread is tasty and had a decent crumb. It could be used for sandwiches which is the ultimate test. That said, my loaves weren't pretty. They were fairly rustic looking which is not typical for this experienced bread baker.

Semi-Indulgent Easy Brown Rice

Tried with instant organic brown rice. It was pretty tasty! I did it stove top, though.

Apple Squares

I followed this recipe exactly minus the nuts. It could use more apple, but was tasty and we will definitely be making again!

Old-Fashioned Vanilla Pudding

Reviewed: Aug. 18, 2011
Awesome quick (well as quick as homemade pudding gets) recipe! All other recipes I've tried had things in a different order and I liked the convenience of this one. Easily doubles.

Brooke's Best Bombshell Brownies

Reviewed: Jul. 11, 2011
Chewy and thick and not at all cake-like...just like I wanted. I also have to say, these are the first brownies I've ever made that were thick, didn't have overly crispy edges, AND cut beautifully? I threw them in the freezer for about 5 minutes to cool properly so I could cut immediately, and they cut perfectly! I'm in heaven and will never make another recipe. I did add about 2/3 cup of chopped pecans as well.

Perfect fudge sauce recipe. Let it cool about 3 minutes and it is thick just like it should be!

Chocolate Eclair Dessert

Reviewed: Apr. 20, 2010
This was okay, I guess, but the canned frosting is really bad...make your own chocolate sauce topping or forget this recipe. Also, note to self, cinnamon graham crackers-not good in this recipe...

Honey Mustard Dressing II

Reviewed: Apr. 18, 2010
Awesome quick recipe. I added a touch more honey and a touch of celery seed for my tastes, but the original recipe is just fine!

Cucumber Gyro Sauce

Reviewed: Jan. 15, 2009
Not bad. I subbed 1/2 c. yogurt for 1/2 c. of the sour cream, and added a Tbl. of sugar, as well as some feta cheese, crumbled. I shoulda thrown it all in the blender, b/c I like a thinner sauce. This recipe was simple, and it was okay, but I may still use another recipe if I have more time on my hands next time.

Traditional Gyro Meat

Reviewed: Jan. 15, 2009
Pretty decent. Spices are a bit strong, but certainly still okay. It was a lot easier than I thought it would be, and made a great substitute for eating out. Only slightly more involved than making a meatloaf, really. Also, I subbed dehydrated onion flakes and grilled the slices before serving.

Easy Baklava

Reviewed: Jan. 15, 2009
I used all walnuts, minus a couple tablespoons of pecans (they were leftover, so I used 'em). This recipe turned out just as good as any Greek restaurant's does. If I ever decide to torture myself with the monotony of making baklava again, I will definately repeat this recipe!

Peppy's Pita Bread

Way better than storebought, and only about the same amount of effort as you put into homemade dinner rolls. Perfectly lovely recipe!

Oven-Fried Catfish

Most flavorful catfish I've ever had...really yummy, and so simple! I love it. I substituted buttermilk for the skim milk, but otherwise followed the recipe exactly.

Sweet Potato Bake

Reviewed: May 16, 2008
This recipe was great! If you like praline pecans and creamy sweet potatoes, you'll love this recipe! Very simple to prepare and a crowd pleaser to boot. I halved the recipe and made it in a square baking dish, used chopped pecans in place of the pecan halves, and it converted well. I would double the topping on it in the future, but that's personal preference.

Banana Upside-Down Cake

Reviewed: Apr. 19, 2008
This recipe is awesome! My family rated it a 10 out of 5 stars, hehe. Quick to prepare, nice presentation, and a great alternative to those that find pineapple to be too caustic for their tastes. The only change I made was that I couldn't find banana cake mix, so I used a buttery yellow cake mix and added 1 tsp. of artificial banana flavoring. Next time I will increase the amount of brown sugar and nuts on the bottom, just because we really liked that part the best, but really this recipe is great as-is!
